(More customer reviews)The nonstick coating works as advertised.It's possibly not quite as nonstick as the best Teflon coatings but then again, the Teflon coatings contain a poisonous chemical that is showing up in the cord blood of newborns even though DuPont swears that it cannot migrate out of the pan.It's definitely slick enough for the omelettes I cook in it.

The only thing that keeps me from giving this pan a five-star rating, other than the fact that it's expensive, is that the coating seems to be a bit of an insulator, which makes sense because it contains ceramic, which is an insulator.In other words, it takes a bit longer for the pan to heat up and the food to cook than our previous Teflon pans, and when you shut off the heat the food stops cooking fairly quickly.I can accept these minor drawbacks to avoid the cancerous chemical in Teflon.Bravo, Fissler.

(More customer reviews)I first found out about Fissler products in Asia.Here in USA, we only know about All-Clad, after using my first set of Fissler (pan and cover) I would rate Fissler products to be well designed. The dome cover is very unique, it makes cooking so fast and keeps the moisture.The first time I am able to fry food with a crispy bottom and moist top (fish, pork), and vegetables can be cooked without fat and with very little liquid to retain the juice.

In short, an ideal setup for low-fat, flavorful cooking. 5 stars for performance, 4 stars for being expensive.
