Takoyaki Pan Review

Takoyaki Pan
Average Reviews:

(More customer reviews)
I was really surprised at how heavy the pan was. I am a little worried about the wooden handle though. The handle screws into the pan, but to me it doesn't seem very sturdy. We'll see how it holds up after a few months.

As expected, it only came with the pan. There appeared to be a recipe on the back but it's all in Japanese which I don't read. I found my recipe online instead. The first few batches didn't turn out very well due to errors on my part, but soon they were looking similar to the ones I had in restaurants.

Overall it's a good product.

I bought this product expecting something of lesser quality for what I paid....I was way wrong. My only regret was that I did not purchase more sets to give as gifts. The glass lids are great, the color is very modern and attractive. The quality of the silicone handles is a plus. Great Deal!

Matfer Bourgeat Black Steel Frying Pan, 8-5/8" dia. Review

After reading an article in Gourmet, instructing the basics of omelets and the use of an 8 inch black steel pan, I am ordering a second of these pans. This pan is really great in making omelets - or so my husband says - he's the egg man - all I can say is that the omelets taste great!!!! and are omlet shaped unlike past omelets made in a completely different pan. The only sticky point is the label that it arrives with - it is very sticky and when removing the label, a thin film of glue is left behind on the pan. You need to follow the directions to the T - cooking potato skins and salt really does remove the glue. I was very skeptical, but it actually works and you'll have a great pan.

The pan is performing as hoped for. This small 8 inch pan is used for preparing an egg or sweating onions, peppers, etc. The metal handle has not gotten hot.The three rivets holding the handle to the pan transmits a solid feel and the handle's correct length allows good control for flipping.Everything easily washes off with a rag.

Product Description:
This Calphalon One Infused Anodized Nonstick 8-inch fry pan combines two technologies for unparalleled nonstick cooking. This line of cookware is the first to combine Calphalon's exclusive infused anodized technology with a nonstick cooking surface. Four interlocking nonstick layers on the interior coupled with hard-anodized aluminum construction give you efficiency and control over your cooking. The exterior surface of the pan is infused with an advanced release polymer, which was originally developed for Calphalon's One Infused Anodized cookware. This polymer prevents food from sticking, resists staining, and is easier to clean than most other surfaces.

Calphalon One's riveted, well-balanced stainless-steel handle stays cool on the stovetop and comfortable in your hand. All pans feature flared rims for neat and easy drip-free pouring. The cookware won't stain, peel or react with acidic ingredients, and promotes uniform searing and browning. Durable enough for use with nylon and wooden utensils, Calphalon One Infused Anodized Nonstick cookware is safe for gas, electric, and ceramic stovetops and is oven-safe to 500 degrees F. The nonstick cooking surface releases food easily during cleanup, and all pieces can be washed with hot soapy water and a sponge (but not in the dishwasher). All Calphalon One cookware carries a lifetime warranty and is made in the USA.
From the Manufacturer
One Infused Anodized Nonstick Cookware
Calphalon One Infused Anodized Nonstick cookware is the first cookware to combine Calphalon's exclusive infused anodized technology with a revolutionary nonstick cooking surface, giving you flawless food release, enduring nonstick performance, unmatched durability, and effortless cleanup inside and out.
Two Technologies
To create an unparalleled nonstick cooking experience, Calphalon One Nonstick features a proprietary matrix of four interlocking nonstick layers, each of which contributes to the cookware's unmatched durability in the kitchen. Sushi rice, mozzarella cheese, caramel--even the stickiest foods--lift easily from the exceptional nonstick surface. Delicate foods such as eggs and fish filets won't tear when you turn them, either. Rigorous testing, simulating years and years of daily use, proves that Calphalon One Nonstick will perform consistently for as long as you cook with it.
And by means of an exclusive, breakthrough anodization process, the exterior surface of the pans is infused with an advanced release polymer. This material actually penetrates below the surface, into the pores of the metal. The infused anodized exterior offers superb durability and prevents staining.
Extreme Durability
The four interlocking layers of nonstick, the heavy-gauge aluminum construction, and the riveted handles all offer superior durability. Calphalon One Nonstickwithstands high temperatures (up to 500 degrees F in the oven) without warping. Pans feature flared rims for drip-free pouring and extra strength, too. Use wooden, nylon, or plastic utensils to maintain the nonstick cooking surface.
Cooking Versatility
Calphalon One Nonstick is ideal for virtually any kitchen and any cooking technique you can name. It's compatible with gas, electric, and ceramic stovetops and is safe for use in the oven. You'll experience no sticking with Calphalon One Nonstick--and you'll cook with more confidence.
Classic Vessel Shapes
Like the classic French cookware that inspired its shapes, Calphalon One Nonstick vessels are designed to deliver optimal results with specific cooking techniques. Calphalon One Nonstick is constructed from heavy-gauge aluminum and features flared rims for protection against wear and tear and to facilitate pouring. Ergonomic stainless-steel handles bring both greater versatility and beautiful style to the cookware.
Cool Comfort Handles
Triple-riveted and ergonomically balanced, the contoured handles stay comfortable cool for stovetop cooking. They are constructed of stainless steel are carefully balanced and proportioned to make cooking with every Calphalon One Nonstick pan comfortable and convenient.
Lifetime Warranty
Calphalon One Infused Anodized Nonstick cookware is covered by a lifetime warranty. Calphalon will repair or replace any item found defective in material or workmanship when put to normal household use and cared for according to instructions. Minor imperfections, surface markings as a result of shipping, and slight color variations are normal. This excludes damage from misuse or abuse, such as improper cleaning, overheating, dishwasher use, and use of caustic or other unapproved cleaners.
Heat Settings
Use a lower heat setting than you normally would. Calphalon cookware heats and cools more quickly than other cookware because it's made of heavy-gauge aluminum. It's important to use the right heat setting for the cooking method you're using. Experiment to find the right heat settings on your stove.

High heat for boiling or reducing liquids only.
Medium to medium-high heat for sauteing, stir frying, and frying.
Low heat for warming food, simmering, and preparing delicate sauces.

Stovetop and Oven Use
When sauteing, stir-frying or frying, always preheat the pan at the temperature setting you'll use to cook. Preheating provides maximum control. The pan is properly preheated when the rim is hot-to-the-touch. Do not preheat on high. For cooking techniques such as sauteing, stir frying, or preparing an omelet, preheat at medium to medium-high. Infused anodized pans can be used in the oven up to 500 degrees F. Handles will become very hot in the oven. Always use a potholder or mitt.
Quick Cleaning and Care
Hot, soapy water and a dish cloth--that's all you need to keep Calphalon One Nonsticksparkling clean. The nonstick cooking surface releases foods as easily during clean-up as it does while you cook. To keep your cookware looking new, occasionally clean it with a Scotch Brite pad and Barkeeper's Friend cleanser.
Do not clean Calphalon One Infused Anodized Nonstick cookware in a dishwasher. Dishwasher detergents will damage the surface. Dishwasher use will void your lifetime warranty. Hand wash your cookware thoroughly inside and out after every use. Wash with hot, sudsy water and a dishcloth or sponge. To restore your pans to "like new" condition, wash with a green Scotch Brite pad and Bar Keeper's Friend. Pay special attention to rinsing when you use Bar Keeper's Friend; without careful rinsing, the cleaner my occasionally leave a powdery soap film.

Do not use oven cleaners or other caustic cleaning solutions, baking soda, automatic dishwasher detergent, liquid bleach, liquid household cleaners used for walls, floors, porcelain, etc.

Always allow your pan to cool before washing. Submerging a hot pan in water can cause irreparable warping.

For stubborn burnt-on spots, allow your pan to cool then soak in hot, soapy water for 10 minutes. Burnt-on foods will lift off after soaking.

To restore shine to stainless-steel covers, wash with a dish cloth or sponge and Bar Keeper's Friend.

Because Calphalon One Nonstick is hand-crafted cookware, you may notice subtle variations in the pans' finish. These "character lines" are perfectly normal--a natural result of the manufacturing process.

Hard to season these pans and even harder to keep it seasoned. I tried all recommended methods. You have to spend hours, and numerous times to really achieve a black surface. Then it is good, but for couple of months. Then black patina starts to peel away. I assume heat control is important, but different receipes require different heat intensity. I definetely prefer cast iron over these. One more negative, food and oil gets stuck at handle point-not very higene.
Now positives- good heat retention, it feels sturdy in hand.

Fissler Blue Point Pressure Cooker Set - 021 644 12 002 (Stainless Steel) (18.31"H x 12.01"W x 14.96"D) Review

Fissler Blue Point Pressure Cooker Set - 021 644 12 002
Average Reviews:

(More customer reviews)
I got kind of caught up in thinking a cheap pressure cooker would do. Been there, wished I hadn't done that with other stuff. But anyway purchased this set, and at the price I considered the product needed to be premium. It actually comes also with a steamer basket and stand for the steamer basket that's not mentioned. For me it's turned out to be the perfect ensemble, giving both skillet for curries and one person meals, as well as a larger stock pot for stocks and larger meals. So it's really a six piece set, 2 more than the 4 pieces shown.

In the performance category it heats up very nicely and when I brown before pressurizing it cooks evenly. It's a great fit for small burners. Once heated up, it takes very little heat to keep it pressurized. On my induction range, the skillet will stay pressurized at a setting of 2.4 of 10 (on electric dial). The larger pot will stay fully pressurized from 3.0 to 4.5 depending on what it's cooking. When cooking lentils I like to cook them so they are thick when done, rather than soupy. In a pan with a flimsy bottom they can burn quite easily. But the dal comes out nice in the skillet and it's easy to tell the heat is being evenly diffused, no hot spots. But also, because it will stay pressurized at such a low heat, there is even less likelihood of scorching.

There is a stainless steel covered aluminum disk on the bottom so it does work well with induction. But also, pan has some heft and seems to insulate well so I can use the lower heat settings as already mentioned.

In terms of making stocks, I frequently make both chicken and beef stocks, and had been using an 8 qt dutch oven that I'd keep at around 5.5 out of 10 and let run for hours (up to 8). Now for chicken in 40 minutes and beef stock with roasted bones around 80 minutes. The chicken stock in particular has a very nice yellow hue that I'd never been able to obtain with the dutch oven. The beef stock gets much more gelatin than I'd ever gotten out of the bones with the dutch oven. Both stocks are the tastiest I've made when using the dutch oven (a heavy cast iron pot). So in terms of pressure cookers for stocks, this is a big winner. But I assume any pressure cooker will make a good stock. I've made several of the recipes in the included recipe book as well as recipes from another book and just cooked various curries and spicy lentils with no particular recipe.

The instructions are written in clear English and there are two booklets included. One of them has about 30 recipes including a couple put together just for this set of cookware.

I frequently will use both at once, cooking the faster dish in the skillet, then transferring the lid and covering the skillet with the glass lid and storing in a warmer drawer until the larger pot finishes. This has been a very efficient method to cook several dishes quickly.

The blue with white ring pop up is very nice and convenient way to see the pressure level. In particular with an induction (or a gas range I'm sure), it's quite simple to get it to a pressure you like or to keep it fully pressurized with just a little blow over. Very satisfied with that. The pop us is clearly marked so you can really set it at any pressure you want through adjusting heat level. Again, on an induction range this is very simple to do.

This pressure cooker is absolutely silent when you adjust the heat right to just let it have the slightest bit of blowoff, which comes out practically silently.

Cleanup. What can I say except absolutely simple and fast. Nothing to disassemble, you just clean it. The silicon gasket pops right out and back in with no fuss or muss. The nice stainless steel surface is holding up well (I've had the set about a month now and used it almost daily). No handles to remove and reassemble.

The set comes packed very well. No worries about damage in shipping. The knob on the glass lid needs reversed (easier to pack with knob in the convex side of the glass lid), but that takes all of one minute. The box is surprisingly sturdy. I'm keeping it to use for storage.

The construction of the pans seems top notch. Though the handles are plastic. I can envision that someone will put the skillet on a large burner and scorch the handles, but with an induction range, I don't have that concern. But I can say I use both pans on the smaller burners of my range, not the largest. Induction tends to work better with proper sizing. But because of the way the bottom is tapered, this does free up the larger burner for some other pan that needs more burner.

Overall, I'm happy with this purchase and the product. Given the results I've been getting and the ease of cleanup, the price hasn't bothered me either. Seems like a good value. Can't find anything to complain about, rather I'm quite excited about the new and better outcomes I've been getting with some dishes that I'd thought were already as good as they could be, but are turning out more flavorful and cooked in a fifth the time or faster.

I considered models like Kuhn Rikon, but think Fissler has them beat on ease of cleanup, and also think at best the Kuhn Rikon cooks the same as the Fissler. I have a Kuhn Rikon sauce pan and the bottom plate for heat diffusion is very similar however the Fissler just seems to be thought through a little better (it's ever so slightly curved on purpose so that when it heats up it's perfectly flat). Fissler calls the bottom 'Cook Star' technology, for better and more even heat diffusion. I suspect it would work very nicely with gas. The Kuhn Rikon bottom plate, in comparision is just a flag plate with the company name stamped in the middle (on my sauce pan, I don't have the Kuhn Rikon pressure cooker).

Fissler seems like it's new on the US market but it's clear they didn't just start selling product here with no forethought or business planning (like Mageplus with Spanish instruction manuals). Rather it's clear they've setup a US office and division to serve this market and guarantee at least 10 year part availability from date of purchase. Though I do wish we could buy the European market models that allow higher pressures. Maybe I'll pick up a lid when I'm over there next time. Anyway, even if they do stop selling here in the US for some reason (as in no one buys their product), there's still plenty of time to stock up on gaskets. But being silicon gaskets, they look like they might last for 5 years, even though Fissler recommends replacing after 2 years or 400 pressurizations. I've probably done 50 pressurizations on lid so far, and the gasket looks like new. When well made, silicon seems to last forever.

For me this pressure cooker set has worked out well. I can and do recommend it with no reservations. If motivated, I will update in about two years to give an update.

Product Description:
Too busy to cook? Not anymore! Once you discover the benefits of pressure cooking, you'll never order take-out again! With a pressure cooker, you save up to 70% of the regular cooking time! Each pressure cooker has two pressure levels, a gentle pressure level for cooking delicate food like vegetables and fish, and a speed pressure level for cooking meats and stews quickly. Not only are Blue Point pressure cookers convenient, they are also safe and reliable. The valve only engages once the handle is properly locked and it ensures a safe build-up of pressure and opening of the lid by automatically closing once the oxygen has escaped. The valve also automatically releases any excess pressure to maintain a safe level at all times. The cooker can only be opened if it has been depressurized completely. The stainless steel lid locks into place, creating a tight seal, and pressure can only build if the lid is put on correctly and locked. It is impossible to open the lid with pressure inside. There is also an automatic steam release function at the main control valve, which permits excess steam to escape if necessary. There's a perfectly sized Blue Point pressure cooker for you! Choose from 4.8 Qt, 6.4 Qt, 8.5 Qt, 10.6 Qt. And if you want to expand your pressure cooking repertoire, consider the Pressure Cooker Set. It includes a 6.4 Qt pressure cooker and a 2.7 Qt pressure skillet with a tempered glass lid. Assembly level/degree of difficulty: No Assembly Required.

KitchenAid 80429 Gourmet Reserved 12-Piece Hard-Anodized Cookware Set Review

KitchenAid 80429 Gourmet Reserved 12-Piece Hard-Anodized Cookware Set
Average Reviews:

(More customer reviews)
Have you ever noticed, that when you move a lot, you tend to somehow 'mislay' articles from the kitchen? It's amazing. When you pack up to move, you have a whole set of stainless steel insulated cookware, but when you unpack, you don't.That is what led me to purchase new cookware. The one thing that I never really liked about stainless steel was that things stick. My granddad recently got some hard andonized pots and pans and seems to like them fine, so I figured why not?

I've had my set for several months now, and while I am not completely dissatisfied, I am not as satisfied with this set as I would've liked. The non-stick surface is really good.I've never had a problem with anything sticking. But, if you're like me and work 12 hour shifts, you become really good friends with your dishwasher.Unfortunately, these are not dish-washer approved.I was unaware of that at the time of purchase, and that would've affected the sale.

Also, I know the previous reviewer mentioned the heat conductivity of aluminum being second to copper.I don't believe it, and neither should you. I fight a chronic battle with hot spots every time I cook.Inevitably, the center of the skillet (especially with the 12") get's very hot, while the edges are still, at best, warm.Dishes that I could turn on and ignore in my old cookware must be constantly monitored in these.

On the positive side, however, aluminum is *much* lighter than stainless steel.I have problems with my wrists, and lifting my 12" steel pan was something of a problem one-handed.Not so with these.

So, there are positives, and there are negatives.I guess it depends on how particular you are about what you cook in.I am a very particular cook.I can be very exacting and something of a kitchen tyrant, and I expect no less from my pots and pans.Someone who is more of a casual cook and isn't dead-set on perfection might thoroughly enjoy this set with no reservations.

de Buyer Steel Frying Pan, Made of Heavy Quality Steel Review

de Buyer Steel Frying Pan, Made of Heavy Quality Steel

The pan really does caramelize the food, respond well, etc.Almost seems to be able to concentrate the stove's heat, which is great if your stove isn't super powerful but you are trying to cook big portions. It feels very "real" to have these things in the kitchen: they aren't glitzy (they get ever less glitzy over time), but they are serious pans.

All-Clad Stainless-Steel Saute Pan Review

All-Clad Stainless-Steel Saute Pan
Average Reviews:

(More customer reviews)
I own the 3-Quart version of this pan, purchased in a set before I knew better, and have used this 4-Quart. I prefer this one because its taller sides make doing a true sauté (which means "jump" in French) of the ingredients a bit easier. Taller sides like this are what are found in most European sauté pans. The previous review is inaccurate in that both the 3-Quart and 4-Quart All-Clad pans are identical in diameter, which can be verified at All-Clad's web site.
Per All-Clad, the LTD and Master Chef lines use thicker aluminum so if you don't need the ease of maintenence and durability that comes with a stainless-steel exterior, I would suggest you consider these other lines for their more even (i.e. better) heating performance.
Also, there are higher-end cookware lines out there than All-Clad. Don't think that All-Clad is the "best" available. Brands such as Demeyere and Bourgeat have features such as more durable exterior finishes (Demeyere Atlantis, etc.), thicker aluminum cores, more comfortable handles (an All-Clad weakness), and even full copper (more conductive than aluminum). These come at a higher price than All-Clad. On the other hand, there are less-expensive product lines such as Calphalon Commercial (often cheap on Amazon.com!) and brands used in commercial kitchens like Sitram.
Still, this is a nice pan and I don't think you can really go wrong with All-Clad. It's the best commonly available at consumer kitchen shops and easy to order on Amazon.com.

Product Description:
Designed for cooking foods in a small amount of oil or butter while continuously tossing, stirring, or shaking, the saute pan is wide to provide ample room for food movement, with a flat bottom to slide smoothly back and forth on a burner, and straight sides keep food from sliding out. The slightly domed lid lets you finish a dish under cover without changing pans. Stick handle stays cool during normal stovetop use, and the helper handle makes it easier to lift when full.
- 3-Quart: This size is great for pan-frying potatoes or batter-dipped vegetables such as mushrooms, zucchini, or sliced green tomatoes; also wonderful for slow braising.
- 4-Quart: We like this pan for three-step cooking of steaks or chops: sear them over high heat, finish cooking in the oven, then return pan to the stove to make a wonderful sauce from meat drippings, wine (to deglaze), butter, and herbs.
- 6-Quart: Great for shallow braising, this 6-quart saute pan can also be used as abain mariewhen preparing custards.

All-Clad's leading cookware line is brilliantly styled with a hand-polished gleaming stainless-steel finish that many of the world's professional and home chefs prefer. The 18/10 stainless-steel interior will not react with your food, leaving the pure taste you desire. Dishwasher-safe.

Chefmate® Jumbo Cooker 12" Fry Pan with Glass Cover Review

Chefmate® Jumbo Cooker 12' Fry Pan with Glass Cover

I love the size of this pan but it simply will not heat! I cooked pancakes in it and they would not brown. I deep fat fried okra and it took 45 min. on high till they browned and were so tough they were difficult to chew. Almost burned my stove up. I never cook anything on high heat! Tried to fry bacon in it. Wouldn't do anything. I switched pans and it immediately started sizzling. I do not recommend this pan!

I actually have this product but bought it at a store. I like it a lot. I can't imagine buying it here for an extra $15 in shipping. To Martha: The shipping charges are listed all over the place before you place your order. You should probably be aware of the shipping charges before you purchase ANYTHING online. Lessons learned I guess.

Steel French-Style Fry Pan 11" diameter, 1-5/8" Top Depth Review

Steel French-Style Fry Pan 11' diameter, 1-5/8' Top Depth

I love "white steel" cookware. When I received this skillet my first impression was that it was very light in weight. All my other carbon steel skillets are quite heavy. Once I seasoned it and used it my doubts left. Does a good job whether I am sauting vegetables or searing meat. I'm happy with it.
