I own the 3-Quart version of this pan, purchased in a set before I knew better, and have used this 4-Quart. I prefer this one because its taller sides make doing a true sauté (which means "jump" in French) of the ingredients a bit easier. Taller sides like this are what are found in most European sauté pans. The previous review is inaccurate in that both the 3-Quart and 4-Quart All-Clad pans are identical in diameter, which can be verified at All-Clad's web site.
Per All-Clad, the LTD and Master Chef lines use thicker aluminum so if you don't need the ease of maintenence and durability that comes with a stainless-steel exterior, I would suggest you consider these other lines for their more even (i.e. better) heating performance.
Also, there are higher-end cookware lines out there than All-Clad. Don't think that All-Clad is the "best" available. Brands such as Demeyere and Bourgeat have features such as more durable exterior finishes (Demeyere Atlantis, etc.), thicker aluminum cores, more comfortable handles (an All-Clad weakness), and even full copper (more conductive than aluminum). These come at a higher price than All-Clad. On the other hand, there are less-expensive product lines such as Calphalon Commercial (often cheap on Amazon.com!) and brands used in commercial kitchens like Sitram.
Still, this is a nice pan and I don't think you can really go wrong with All-Clad. It's the best commonly available at consumer kitchen shops and easy to order on Amazon.com.

I love the size of this pan but it simply will not heat! I cooked pancakes in it and they would not brown. I deep fat fried okra and it took 45 min. on high till they browned and were so tough they were difficult to chew. Almost burned my stove up. I never cook anything on high heat! Tried to fry bacon in it. Wouldn't do anything. I switched pans and it immediately started sizzling. I do not recommend this pan!

This pan really does what it says.It heats quickly and evenly (no hot spots) and the finish is probably indestructible.I've had one for over a year and frequent use has yet to produce a crack or a chip in the finish.Clean-up is a snap because nothing sticks, and I can grab the handle without needing a pot-holder.I'm ordering more for me and for our kids.

I've been using Sitram for several years, and I've never had any problems. The stuff is built for the food industry - no frills and no fancy packaging, but it will stand up to use and abuse.

The company changed hands a couple of years ago, and for a little while during the transition their customer service was suffering. Don't let that detract you from buying this cookware.

(My only beef is that they've discontinued the Magnum Pro line, which was the only copper-based line that also worked on induction. Dear Sitram/Freiling folks - please, oh please bring it back).

I recently bought this pan and have used it and I'm very happy with it.First, this pan is HEAVY and solidly built.The quality is excellent--for example, the rim is nicely finished and the spot welds securing the handle will last forever.The steel is very thick, at least twice the thickness of an American made Vollrath steel fry pan that I own.

I fried a couple of steaks and this pan really retains the heat.You don't have to crank up the heat to cook a steak in this pan.

I highly recommend this pan.The merchant packaged it carefully and it arrived very quickly.

This is my benchmark pan.Most of my collection is All-Clad Stainless.Generally speaking, I consider All-clad to be a standard for servicable cookware.Myself as well as many in my extended family have had heaps of junk fraudulently sold as cookware.I cannot believe some of the pathetic things others use.It's cupped, coned, damaged or sticks and heats so unevenly you can see it on the food.

All-Clad on the other hand has nothing to be ashamed of.It is not exactly luxury stuff though.The copper here is mostly a decorative layer -- which is lost on my wife who insists on scrubbing any marks out of it -- in lieu of the stainless layer on that line.This is not like the French copperwares with several millimiters thick copper and a tin or sterling silver lining.

From my experience, All-Clad is All-Clad and the main difference between the various lines is the color of the outside metal.The layers on a 5-layer pan are so thin I doubt they're appreciably different than 3 thicker layers.Whatever -- pick your color and enjoy a consistent, well-made stainless-lined pan.Pick out a Lodge cast iron pan and Le Creuset's enameled iron and you'll have a pan for almost every job.Forget the non-stick -- they're disposable.The pans (All-Clad) are the same but the lining is no better than the multitude.It lasts about a year in my kitchen and then it's toast.That's a shame because a stainless lined pan for the same cost should last a lifetime.

First, note there is no lid included, as the illustrations in the product description might lead you to believe.
This is a big pan, and if you fry things in big batches (I like to make spaghetti sauce in 4 gallon batches, with a proportionate amount of hamburger frying), this works great.It heats evenly and cleans easily, and the quality is top-drawer.When you cook eggs, the ones on the outside of the pan cook at the same rate as the one in the middle, something you don't get with all frying pans.
On the downside, the handle is very heavy.So when you sit it on the stove to preheat (empty), it overbalances to the handle side, rather than sitting flat on the burner.And a pan this size could use a ring, or grip, on the side opposite the handle, as many other pans have.When you have 2 or 3 lbs of hamburger inside, and want to drain the fat, it's trick balancing things with just the single handle.
I did some digging, and couldn't find anything better for the price, so I'm willing to live with the shortcomings.They are annoying but not deal-breakers.Until something better comes along, this is a good buy.

This is a good value for a large non-stick pan.The interior coating is excellent, and the exterior is bright-finished stainless.It has plenty of depth and works well in my kitchen.

The only caveat is that it is very lightly-built.The handle is securely riveted to the pan, but the material is thin, which leaves it feeling fragile and floppy.The pan works great, but is absolutely not "commercial chef" level construction.Suitable for amateurs like me..

This is a masterpiece. We love both this 11 inch and the 9.4 in Fry Pan. After our initial experience with the 9.4 pan. We decided to purchase this 11 inch and it's a great cooking surface. Totally love it. We also have an All Clad but it is a huge difference between the Demeyere and the All Clad. Demeyere is the obvious winner. We've seen All Clad after a few use and the finishes has faded loosing it's nice shinny appeal compared to the Demeyere. Of course, the Demeyere Sirocco cooks marvelously needless to say. If you can put out just a few more bucks, you will truly appreciate the Demeyere Sirocco set. We love the Sirocco line because of it's beautiful modern design and details and this set will definitely last a lifetime.

I felt so guilty about spending the money on this when I first placed the order, and yet I was getting sick to death (perhaps literally) of Teflon pans, of skillets (even stainless steel ones) "Made in China" that seemed to impart weird flavors to my morning bacon and eggs, et al.The vague feelings of guilt persisted -- until the pan arrived and I started using it.This is wonderful cookware: it uses a substantially lower flame for cooking than other skillets I have, it cooks with amazingly even distribution of heat, and -- this was one of my biggest concerns -- it cleans very easily, I've experienced little difference between cleaning this and cleaning Teflon skillets.So, the comparable Teflon-coated skillet I once used has now been cheerfully tossed into the trash.True: few of us can afford a whole line of Mauviel Cuprinox, but really you should have at least one of these in your kitchen; I feel much safer cooking my food in it, and ultimately it's a lifetime investment.

I had a whole set of Calphalon Commercial Nonstick cookware.After 10 years, the finish starting peeling off the 12-inch frying pan.I sent the pan back to Calphalon stating that I never used metal in my pans but the finish was peeling anyway.They sent me a brand new Calphalon One pan as a replacement.I so appreciate a company that stands behind their promises and doesn't accuse the consumer for abusing the product and voiding any warranties.

You buy copper pans for heat transfer speed and the benefits of its resulting responsiveness to changes in heat. You buy other pans like Demeyere because they are easier to care for.

Ease of care is important to me, but so is performance. I wanted to find out for sure if the heat transfer differences were very substantial, so I bought a Falk 10.5 quart 11" stock pot and a Demeyere Atlantis 8.5 quart 9" stock pot. (Falk is 2.5mm brushed copper coated with a .008" thick stainless (not tin) lining. They are equivalent to high-end Mauviel or Bourgeat in technical respects, except that they have a brushed finish rather than a mirror polish.)

Starting with a room-temperature stove (in both tests) on a 15k BTU gas burner on high-heat, I timed how long it took to bring *equal* amounts of cold water (same temperature) to a rolling boil. Why a mundane test like boiling water? Because it's an ideal test of the pans' ability to transfer heat rapidly and efficiently. A pan that boils faster is also going to be more adept at quickly handling subtle temperature changes when melting sugar or carmelizing a mound of onions and garlic. A pan that boils water faster is also more energy efficient, which benefits you by not having to introduce as much heat into the kitchen to accomplish the same cooking task (and consequently, to use energy to remove that heat with an air condition during summer months).

The Demeyere took 26 minutes to reach a rolling boil.
The Falk took 19.5 minutes to reach a rolling boil (about 25% faster).

The Falk was extremely responsive to temperature changes. Cutting the heat ceased the boiling within 5-10 seconds.

The Demeyere responded to a heat cut in 8-15 seconds or longer. Restoring the heat resulted in similar lags in returning the pots to full boil. Copper was certainly the more nimble and you could see how a responsive it would be for sautéing or cutting the heat in the event the pan got too hot.

The only real shortcoming in that particular test was that I was comparing an 11" pan to a 9" pan. The broader surface area of the Falk would certainly cause it to absorb more heat and boil water faster. So I also compared an 11" Falk fry pan and an 11" Demeyere fry pan, boiling approximately 4 cups of cold water on a cold stove in both cases.

Again, the Falk won the contest, boiling water approximately 4 minutes faster than the Demeyere fry pan, all things being equal. This size-for-size comparison was as fair as I could make it. If you're looking for cooking responsiveness and rapid boiling, copper's the only game in town.

I ended up keeping the Falk pans and returning the Demeyeres to Sur la Table. For me, the ability to sauté on lower heat; boil water faster; or quickly "rescue" food that's getting too hot (by cutting the heat and obtaining a rapid cool-down) outweighed the benefits of being able to throw the pan in the dishwasher.

The Demeyeres are wonderful pans - beautiful and easy to care for. If you have an induction stove, I'd go with them because copper would require an ugly (and hot) iron lug to be placed underneath the pan. If you have gas, copper is certainly a more nimble metal when it comes to heat responsiveness. The Falks I bought cleaned nicely with Bar Keeper's Friend.

The Demeyere has a brighter silver finish on the inside which I found shows tiny hairline scratches caused by Bar Keeper's Friend (or the green Scotchbrite pad) - whereas the Falk's stainless interior was immune to such scratching.

Both brands are heavy, but Falk is heaviest - some people complain about the weight of copper pans but I think it's just whining to complain about a 5-8lb weight of a pan (it's not that heavy once you get used to it).

I recently purchased the 8" and 14" pans to replace a couple cast iron fry pans my daughter took to college. (Note that these pans are measured by their diameter across the top lip.)First off, I love these pans.They have significant thermal mass, the included directions got them moving the the right direction getting seasoned and non-stick.These pans are closer to carbon-steel than stainless.You will need to treat them like your cast-iron cookware.Bottoms are flat and smooth, which is nice if you have a glass-topped electric range.The one area that I have very mixed feelings about are the handles.I like the angle the handle is set in relation to the pan.I think it helps keep it cool, out of the way, and can even be used for a little extra leverage with the larger plans.In spite of that, the handle poses one limitation.... the ability to use the pan under a broiler.... The 8" pan's handle sits 4 inches above the cook surface.This one just fits into my broiler.But the handle will be very close to the heating elements/flame and so will get very hot.The handle on the 14" pan sits 7 inches above the cooking surface.This will work in my broiler only if I leave the broiler door open.I have worked with commercial stoves which don't have doors on the broiler compartment and I think these pans would work without limitation in that situation....Myself?I will use them with the broiler door open....

I have been looking for a good non-stick skillet. I've used non-stick skillets from All-Clad and Calphalon but they all had one problem: peeling of the non-stick layer. I saw an unused All-Clad skillet from their new line at Williams-Sonoma and it had scratches on the non-stick surface.

I found what I was looking for! This fry pan is excellent! It is made in Switzerland. It is big. The outside diameter is 13" and the bottom is almost 9 3/4". It requires a large burner. I have a Miele electric cooktop which has a burner large enough for this skillet. I have tried it over a smaller burner and it worked as well. The food browned evenly over the surface of the skillet. The cleaning is easy. I only have a small issue with the lid. The lid assembly was easy. However, during washing water gets into the steam vent and then it comes out after the lid is dried. It takes few drying sweeps to avoid water streaks on the lid.

Overall, I am very pleased with this skillet. I am looking forward to getting more skillets from Swiss Diamond.

Update. May 2009. Zero stars.
Like its predecessors from All-Clad and Calphalon, this skillet stopped being non-stick after about a year. It wasn't abused in any way: no metal utensils and no prolonged cooking of foods other than pancakes and fish. Yet, the center of the skillet began to darken first, than the rest of the skillet has darkened. I used baking soda (suggested by All-Clad website). It did remove some brown residue but the skillet is completely not non-stick, everything sticks to it even more.

I am happy with a non-stick skillet from Circulon infinite line. I bought an 11" skillet at Macy's for $20 as a product promotion item. The best non-stick that I have is from LeCreuset. Unfortunately, the largest one LeCreuset made was 9" in diameter.
