I recently bought this pan and have used it and I'm very happy with it.First, this pan is HEAVY and solidly built.The quality is excellent--for example, the rim is nicely finished and the spot welds securing the handle will last forever.The steel is very thick, at least twice the thickness of an American made Vollrath steel fry pan that I own.

I fried a couple of steaks and this pan really retains the heat.You don't have to crank up the heat to cook a steak in this pan.

I highly recommend this pan.The merchant packaged it carefully and it arrived very quickly.

After 52 years of housekeeping, I have finally found the perfect cookware.This little pan is everything the company says it is:nothing sticks to it, it's level with even heating, it takes less electricity to cook with, it can be put in the dishwasher, and the handle really does stay cool, so I don't have to grab a potholder every time I touch it.It makes a perfect omelet.I won't be putting it in the dishwasher, though, because I use it so often that I have to keep washing it.I suffered with Revere Ware (wedding present) for years, finally moved to Calphalon, and am now moving the Calphalon to the garage.It's heavy, has lost its non-stick quality, and since the arrival of the Sitram frypan, has lost what was left of its charisma.The one Teflon pan I own has gone to the landfill.Because I live alone, this pan is just right for one pork chop, one chicken breast with mushrooms, one Egg Beaters omelet.I am ordering a larger frypan, a stewpot, and a saucepan.What a find!

I just recently replaced many of our Calphalon One aluminum anodized pans with All-Clad stainless line and copper core line since they all warpped badly and no longer stay flat to heat evenly on my flat top glass cooktop. We have been very happy about our new All-Clads, and were looking to replace our 9" Calphalon One chef's pan withh an All-Clad but couldn't find one in similar shape - their 8" are very shallow. It took me several days on-line research to come across CIA's Master line. Luckily we had a local store which carries CIA and had it reasonable priced. I bought the 8" pan and found it was as good as the All-Clad in all heating aspects and it was somewhat deeper all around in contrast to All-Clad's smaller fry pan. My wife is very happy about this purchase. We'd recommend CIA to whoever likes to give it a try.

You buy copper pans for heat transfer speed and the benefits of its resulting responsiveness to changes in heat. You buy other pans like Demeyere because they are easier to care for.

Ease of care is important to me, but so is performance. I wanted to find out for sure if the heat transfer differences were very substantial, so I bought a Falk 10.5 quart 11" stock pot and a Demeyere Atlantis 8.5 quart 9" stock pot. (Falk is 2.5mm brushed copper coated with a .008" thick stainless (not tin) lining. They are equivalent to high-end Mauviel or Bourgeat in technical respects, except that they have a brushed finish rather than a mirror polish.)

Starting with a room-temperature stove (in both tests) on a 15k BTU gas burner on high-heat, I timed how long it took to bring *equal* amounts of cold water (same temperature) to a rolling boil. Why a mundane test like boiling water? Because it's an ideal test of the pans' ability to transfer heat rapidly and efficiently. A pan that boils faster is also going to be more adept at quickly handling subtle temperature changes when melting sugar or carmelizing a mound of onions and garlic. A pan that boils water faster is also more energy efficient, which benefits you by not having to introduce as much heat into the kitchen to accomplish the same cooking task (and consequently, to use energy to remove that heat with an air condition during summer months).

The Demeyere took 26 minutes to reach a rolling boil.
The Falk took 19.5 minutes to reach a rolling boil (about 25% faster).

The Falk was extremely responsive to temperature changes. Cutting the heat ceased the boiling within 5-10 seconds.

The Demeyere responded to a heat cut in 8-15 seconds or longer. Restoring the heat resulted in similar lags in returning the pots to full boil. Copper was certainly the more nimble and you could see how a responsive it would be for sautéing or cutting the heat in the event the pan got too hot.

The only real shortcoming in that particular test was that I was comparing an 11" pan to a 9" pan. The broader surface area of the Falk would certainly cause it to absorb more heat and boil water faster. So I also compared an 11" Falk fry pan and an 11" Demeyere fry pan, boiling approximately 4 cups of cold water on a cold stove in both cases.

Again, the Falk won the contest, boiling water approximately 4 minutes faster than the Demeyere fry pan, all things being equal. This size-for-size comparison was as fair as I could make it. If you're looking for cooking responsiveness and rapid boiling, copper's the only game in town.

I ended up keeping the Falk pans and returning the Demeyeres to Sur la Table. For me, the ability to sauté on lower heat; boil water faster; or quickly "rescue" food that's getting too hot (by cutting the heat and obtaining a rapid cool-down) outweighed the benefits of being able to throw the pan in the dishwasher.

The Demeyeres are wonderful pans - beautiful and easy to care for. If you have an induction stove, I'd go with them because copper would require an ugly (and hot) iron lug to be placed underneath the pan. If you have gas, copper is certainly a more nimble metal when it comes to heat responsiveness. The Falks I bought cleaned nicely with Bar Keeper's Friend.

The Demeyere has a brighter silver finish on the inside which I found shows tiny hairline scratches caused by Bar Keeper's Friend (or the green Scotchbrite pad) - whereas the Falk's stainless interior was immune to such scratching.

Both brands are heavy, but Falk is heaviest - some people complain about the weight of copper pans but I think it's just whining to complain about a 5-8lb weight of a pan (it's not that heavy once you get used to it).

I recently purchased the 8" and 14" pans to replace a couple cast iron fry pans my daughter took to college. (Note that these pans are measured by their diameter across the top lip.)First off, I love these pans.They have significant thermal mass, the included directions got them moving the the right direction getting seasoned and non-stick.These pans are closer to carbon-steel than stainless.You will need to treat them like your cast-iron cookware.Bottoms are flat and smooth, which is nice if you have a glass-topped electric range.The one area that I have very mixed feelings about are the handles.I like the angle the handle is set in relation to the pan.I think it helps keep it cool, out of the way, and can even be used for a little extra leverage with the larger plans.In spite of that, the handle poses one limitation.... the ability to use the pan under a broiler.... The 8" pan's handle sits 4 inches above the cook surface.This one just fits into my broiler.But the handle will be very close to the heating elements/flame and so will get very hot.The handle on the 14" pan sits 7 inches above the cooking surface.This will work in my broiler only if I leave the broiler door open.I have worked with commercial stoves which don't have doors on the broiler compartment and I think these pans would work without limitation in that situation....Myself?I will use them with the broiler door open....

I have owned two of these pans for just over a year. Use them almost daily. High quality interior and exterior. I hand wash immediately after use. Bought them for my induction cooktop in another state. Now in another house where I use them on electric cooktop. I bought the glass cover as well. Absolutely tremendous pans. By the way, I do not use oils or grease or Pan - just water or broth. I have learned to let ingredients get to "dry" and then add some water gives the same brown color and flavor as using oil, without the calories and greasy feel to foods. I highly recommend this pan

Do Not Buy! - production defect as of Oct 8,2009.
I ordered this hotplate due to some good reviews in another website.
This product had a deep scratch on the cooking surface. The glass cut the person opening it. I returned it for replacement. Provantage is very fast and I got the replacement quickly. Unfortunately the replacement also has a deep scratch on the glass surface. There is nothing wrong with the box and plastic bag. This indicates that the product was damaged before being packaged. The packer must be blind. I'm going to stay away from Avanti products.

This pan heats quickly and evenly, and doesn't confer the same texture to the sear as a cast iron does.It's a much more "naked" finished product.So far, I've noticed that the spices and herbs are more up-front than doing something in cast iron.I'm comparing this to cast iron because that's my only reference point for another pan that retains heat, takes a seasoning, and can become extremely non-stick and "self-healing".

I'll update this review after I have some more time with the pan.I wanted to get this up today because I see a lot of different advice on how to season this pan, and I have some relatively foolproof instructions for you.

My wife and I ordered this pan as a lighter weight alternative to cast iron.While it's going to see plenty of kitchen duty, our first use of it will be camping in the wilderness.A really permanent, bulletproof seasoning takes use, care, and time.I needed one tough enough to withstand use and storage in a relatively uncontrolled environment for a few days without rusting.So here's my quick-seasoning guide.Takes a couple of hours, but always produces good results.If you skip or modify any steps, you won't get the same results (this is aimed at those who will invariably try to use grapeseed oil or something as a substitution)

1) You *do* need to peel a couple of potatoes, put the peels in the pan, cover them with an inch of water, and boil for 15 minutes as the instructions mention.There's some sort of shipping coating on this pan that this step removes.You will NOT get a good season on this pan until this coating is removed. While boiling the peels (just the peels, not the potatoes, this step is going to produce inedible results), carefully move the boiling water around the pan by tilting it back and forth.Get that enzymatic, chemically water around all possible cooking surfaces.

2) After 15 minutes of boiling time (not counting the time to get the water to a boil), drain the water, throw out the peels, and dry the pan thoroughly with a paper towel or two.Oil the pan *lightly* with Crisco, lard, clean bacon grease, or peanut oil. Cover the entire pan, bottom and all ... get everything coated except the handle.
*Don't* use canola, olive oil, or any other type of oil right now.You can use them for cooking in the future, but not for this step.

3) I think this is the critical point where people make mistakes. Most people seem to use too high of a heat for an initial seasoning, and/or an uneven heat.Get your oven pre-heated to 400 degrees Fahrenheit.Place a clean cookie sheet (uncoated if possible, not non-stick) on the lowest rack to catch drips.Place the pan upside down on the rack above the cookie sheet, and set the timer for 30 minutes.

4) After 30 minutes, let it stay in the oven for another 30 minutes with the heat off, so it can slowly cool.A slow cooling process really helps the seasoning develop in my experience.

5) Once the pan is cool, take it out of the oven, and wipe it down with a different type of high temperature oil.If you used peanut oil first, this time use Crisco.If you used Crisco first, this time use bacon grease.This is the key.Different oils have different properties, and they'll bond to each other in different ways.I've seasoned a lot of pans in my time, and mixing and matching different oils for the process always results in a much more thorough seasoning, that doesn't flake off easily.

6) Now, repeat step 3 and 4 exactly.

7) You should now have a good initial seasoning.This process will take about 2.5 hours, of which, you'll mostly be waiting.

To keep it developing, here's all you need to know.Yes, the instructions say you can use a little bit of soap.Don't.Just don't.The heat of the pan will kill all possible pathogens.Just gently scrape the remaining food out of the pan when you're finished cooking, and let it cool naturally.When it's just warm to the touch, add a 2" puddle of oil to your pan, and rub it down with a paper towel.If something is really stuck to it, add a pinch or two of kosher salt or sea salt to the pan, and use that to scrub gently with a paper towel, and then re-oil it.That's all you should ever need to do.If you constantly resort to a hard bristle brush and (uggh) use soap, your seasoning will develop poorly and slowly.

ALWAYS store the pan lightly oiled.ALWAYS.If it looks dry, you're doing it wrong.When it comes time to cook, just put some fresh oil on a paper towel, and wipe it out to remove the old oil.

Don't heat the pan scorching hot for long when it's empty, as this will weaken an early seasoning layer and it might flake off in the beginning.

Don't use metal tools immediately.Try to stick to plastic, wood, or silicone tools for the first few sessions of cooking.

There, that's that.I hope these tips help some people get started with a tool that, properly cared for, will last a lifetime and be far more non-stick than any teflon surface could ever hope to be.

EDIT - In response to a comment/question that seems to be deleted

Regarding the safety of oven temperatures and the silicone pad at the top of the handle:

I'm pretty sure it's silicone, though I don't see it addressed anywhere in the manual or online.

My silicone portion looks as new as ever after about 2 dozen trips through the oven.All the other silicone tools we own state 500 degrees Fahrenheit as a maximum temperature, so I have a feeling you shouldn't exceed that as an oven temperature.I have used the pan over a 700F direct heat source without any issues as well.I don't feel there are any safety concerns with silicone at temps below 500F in an oven, as we use silicone baking mats that are much thinner material quite often, and there's never any smell or taste from them at any baking temperature.

Some people use a self-clean cycle in the oven to remove a badly damaged layer of seasoning, but I don't think I will ever do this with mine, as those cycles tend to go to 1000F or higher, and I think that would melt or destroy the silicone portion of the handle.

My husband is an Alton Brown (Food Network) fan. Alton said that carbon steel pans were great so I decided to get one for my husband.I bought a Paderno Heavy Duty Carbon Steel Frying Pan, World Cuisine brand from Amazon and a Matfer brand Black Steel Omelet Pan from another retailer. The Matfer Black Steel Pan was more expensive.More expensive is usually better.It wasn't better. I conditioned both pans in an identical process according to the three step conditioning recommendations that I found online--(oil, heat in oven, wipe out with paper towels and lots of salt to get the stickiness out; oil, heat on the stovetop, wipe with paper towels and no salt; oil, heat on stovetop, fry potato peelings).I even repeated the potato cooking process a second time, switching burners because there was an enormous difference in quality and I didn't want to dislike an expensive new pan when the fault might have been my stovetop.By the time I was done with the potatoes, I could tell a huge difference. The potatoes in the Paderno/World Cuisine pan were crispy on both sides, they didn't stick to the pan at all and they were of the quality of what you could expect at a restaurant.In the Matfer Black Steel Omelet pan that I bought from a different website, the potatoes got a little crispy and then proceeded to get mushy.No matter how long I cooked them, which burner I cooked them on or how high the heat was, they just became mushier and lost their texture, whereas the potatoes in the Paderno/World Cuisine Carbon Steel pan got crispier with more cooking but didn't burn.The potatoes stuck to the Matfer Black Steel Pan in spots and I had to scrape it to get the potatoes off of the pan.The Paderno/World Cuisine Pan didn't stick at all, like a teflon pan.Another thing I noticed was that the Matfer Black Steel pan seemed to concentrate its heat in a 4" radius in the center, whereas the Paderno/World Cuisine carbon steel pan spread the heat out evenly.I look forward to using the Paderno pan and will probably not use the Matfer black steel pan very often.

I've had this skillet for 4 months, and it is growing on me. I typically cook using cast iron or steel skillets.

If you have an induction range, (e.g., I have the Viking Induction) note that the skillet does not contain much inductive material, and it heats considerably slower than carbon steel or cast iron. On the other hand, that is convenient because you do not want to accidentally ruin a nonstick finish by overheating the pan.

There are two design shortcomings. First, the sides of the skillet are too vertical. It is not possible to "toss" well while sauteing. If you only "stir" this is not a problem. It would be better with more angled sides. The second shortcoming is that the handle has a small, awkward loop, which is hard to hang on a pot hook with any other pans.

The strengths are that the skillet is solid and well-built. The nonstick finish is well attached, and looks like new after four months. The nonstick finish is slightly textured which helps distribute oil.

I bought the 8" skillet to supplement my 10 piece circulon Infite set.Non stick and dishwasher safe is for me.So far it's lived up to the advertising.I just toss the the cookware in to the dishwasher and it comes out great.Circulon Infite is non stick - I can't figure out how they do that but omletes come out without sticking without being sprayed and without use of oil or butter.

When I first bought this pan I was replacing a pan from a moderately priced set from Costco.That pan lasted about 3 years and I got my money's worth.

The positive review from America's Test Kitchen is what pointed me in this direction.The Farberware pan was a joy to use when I first bought it and I loved the even heat.All of the positive comments are accurate at first.

The problem is it only lasted 3 months before it lost it's nonstick properties almost completely.I never used spray on oil or subjected it to high heat.I was always very meticilous about the way I cleaned it and never touched the surface with anything but plastic.I even bought a special soft plastic cleaning brush so as to be very delicate with the surface.

I have been using nonstick skillets since they first came out many years ago.With the exception of one ultra cheapo model I have NEVER had a nonstick that had its nonstick go bad so quickly.Of course I can send this back to Farberware but it seems clear that if it has lost it's nonstick properties they only have to say it was my fault.Why waste $10 in shipping costs?This is my last Farberware product.

After writing this first part of the review I thought it would only be fair to email Farberware to let them respond.After doing some googling I have found that there is no email.It is also basically impossible to get someone on the phone.They sold their warranty service to a different company, All American Lighting in Berwick, PA.As it turns out this company gets terrible feedback for their service.If this isn't really Farberware what exactly is their incentive to provide good service?You can check on consumeraffairs dot com and other places and you'll get an eyeful.BUYER BEWARE!
