The pan is performing as hoped for.This small 8 inch pan is used for preparing an egg or sweating onions, peppers,etc.The metal handle has not gotten hot.The three rivets holding the handle to the pan transmits a solid feel and the handle's correct length allows good control for flipping.Everything easily washes off with a rag.

Minor imperfections, surface markings as a result of shipping, and slight color variations are normal. Heat Settings
Use a lower heat setting than you normally would. Calphalon cookware heats and cools more quickly than other cookware because it's made of heavy-gauge aluminum. It's important to use the right heat setting for the cooking method you're using. Experiment to find the right heat settings on your stove.

    High heat for boiling or reducing liquids only.
    Medium to medium-high heat for sauteing, stir frying, and frying.
    Low heat for warming food, simmering, and preparing delicate sauces.

Stovetop and Oven Use
When sauteing, stir-frying or frying, always preheat the pan at the temperature setting you'll use to cook. Preheating provides maximum control. The pan is properly preheated when the rim is hot-to-the-touch. Do not preheat on high. For cooking techniques such as sauteing, stir frying, or preparing an omelet, preheat at medium to medium-high. Infused anodized pans can be used in the oven up to 500 degrees F. Handles will become very hot in the oven. Always use a potholder or mitt.
Quick Cleaning and Care
Hot, soapy water and a dish cloth--that's all you need to keep Calphalon One Nonsticksparkling clean. The nonstick cooking surface releases foods as easily during clean-up as it does while you cook. To keep your cookware looking new, occasionally clean it with a Scotch Brite pad and Barkeeper's Friend cleanser.
Do not clean Calphalon One Infused Anodized Nonstick cookware in a dishwasher. Dishwasher detergents will damage the surface. Dishwasher use will void your lifetime warranty. Hand wash your cookware thoroughly inside and out after every use. Wash with hot, sudsy water and a dishcloth or sponge. To restore your pans to "like new" condition, wash with a green Scotch Brite pad and Bar Keeper's Friend. Pay special attention to rinsing when you use Bar Keeper's Friend; without careful rinsing, the cleaner my occasionally leave a powdery soap film.

    Do not use oven cleaners or other caustic cleaning solutions, baking soda, automatic dishwasher detergent, liquid bleach, liquid household cleaners used for walls, floors, porcelain, etc.

    Always allow your pan to cool before washing. Submerging a hot pan in water can cause irreparable warping.

    For stubborn burnt-on spots, allow your pan to cool then soak in hot, soapy water for 10 minutes. Burnt-on foods will lift off after soaking.

    To restore shine to stainless-steel covers, wash with a dish cloth or sponge and Bar Keeper's Friend.

    Because Calphalon One Nonstick is hand-crafted cookware, you may notice subtle variations in the pans' finish. These "character lines" are perfectly normal--a natural result of the manufacturing process.

I just recently replaced many of our Calphalon One aluminum anodized pans with All-Clad stainless line and copper core line since they all warpped badly and no longer stay flat to heat evenly on my flat top glass cooktop. We have been very happy about our new All-Clads, and were looking to replace our 9" Calphalon One chef's pan withh an All-Clad but couldn't find one in similar shape - their 8" are very shallow. It took me several days on-line research to come across CIA's Master line. Luckily we had a local store which carries CIA and had it reasonable priced. I bought the 8" pan and found it was as good as the All-Clad in all heating aspects and it was somewhat deeper all around in contrast to All-Clad's smaller fry pan. My wife is very happy about this purchase. We'd recommend CIA to whoever likes to give it a try.

I purchased this expensive stainless steel fry pan because the non stick ones I have all have scratched in hardly any time at all, despite using only wooden spoons or nylon spatulas, and we do not like the idea of eating toxic non stick coating in our organic food.

We received this 9 1/2 inch Viking fry pan yesterday from MetroKitchen.com - ordered through Amazon.We very carefully followed the manufacturer's directions for washing and drying and then for seasoning the pan and again washing and drying it.

This morning I thought I put plenty of oil in the pan, preheated it per the manufacturer's instructions, then added chopped onions and mushrooms and then the beaten eggs when the veggies were partly cooked.I used medium low heat and covered the pan.

When the omelet was done it would NOT come out of the pan.It took a couple of minutes of hard scraping with a nylon spatula to get what was now a SCRomelet out and onto our plates.Good thing we didn't have company because it tasted great but looked completely awful.

After soaking the pan for about a half hour and washing it repeatedly with hot soapy water and a nylon scrub pad there were still whiteish spots in the bottom.Only after adding half vinegar and half water and soaking it again did the spots come out.Now it looks bright and shiny again, but so MUCH work!

I reseasoned the pan using instructions from a different web site and am hoping that the next time I use it the results will be better.

I have also written a review of the Viking 8 piece set which we purchased from Amazon at the same time.You might want to read that review to find out about what looks to me like Viking's non existent customer service for their "lifetime warranty".

I got this item this past week and have used it 3 times.It looks beautiful right out of the packaging but the looks don't hold up.The lustre turned lack lustre after the first washing.After the 3rd washing the inside of the pan looks like I've had it at least a year, there are lines and discoloration.I followed manufacturers recommedations and cooked over a low heat and seasoned before the first use.It does heat quickly in that respect I would give it 5 stars.It's listed as 10.25 inches but is actually 10.5 inches.

Can't even cook center of fried eggs. When putting oil or butter in pan it goes straight to back of the pan. When I fried potatoes had to keep putting oil in front of pan. After only 2 washings of this pan coating is already coming off on side. Only good thing about this pan is the cushioney handle.

I'll start by saying that until this point, I was a big T-Fal fan.
I ordered my set of 2 pans in November 07. When I got them, they did not look like the picture on Amazon. I contacted T-Fal about this and they said the picture does not always look like the product.
OK - I was fine with that. I didn't get the Thermo-Spot thing, but that's ok. Next thing I noticed is that the handles on both pans started to feel loose. I contacted the company about it. They said this sometimes happens but not to worry.
Finally, I was rinsing out one of the pans the other day and the handle completely fell off. This is ridiculous! That could have been very dangerous. I tried getting in touch with T-Fal and no luck so far. I will keep trying.
Don't buy these pans!

I like the pan -- except I wish it were deeper.I was trying to replace a Farberware Millenium 10" pan that was 3.3" deep.The product description said this was 3.6" deep.It isn't.I like to use the pan, not just for omelettes, but for anything that needs to be sauteed and then cooked with a lid.I can't do it -- too shallow.

I decided to keep it and not return it, although I am having second thoughts due to the high price.The nonstick surface does work great, and the glass cover is great.

This is a handy little pan. It is fairly well made in Spain. It cleans easily except for the bottom which has a white pattern that stained on first use. It looks nice. It is lighter in weight than I wanted.

Actually, I'd wanted a 12 inch All Clad Saute pan, but they don't make a 12 inch saute with a helper handle on the opposite end. This (CIA Masters Collection) pan DOES have one, and is every bit as well made (if not better, since it has an aluminum AND copper core).And like All Clad -- it's hefty -- so when you add food it helps to have the helper handle. It performs flawlessly.I'm glad I found one that meets all my requirements.

The ongoing debate over cookware at my house is over:All-Clad is the best cookware overall and is worth the extra money.Our coppers tarnish and require retinning.Our encapsulated disk cookware (Reverere and Farberware) suffer from loose and broken plastic handles and too-small disks which limit the cooking area of the fry pans.The biggest debate was between Calphalon and All-Clad LTD nonstick models.My wife really liked the lighter weight of Calphalon's Commercial Nonstick line.After living for both for several years, All-Clad has shown its overall superiority in the following ways:
1) Durability.The non-stick finish All-Clad uses wears like iron.The Calphalon's finish shows many more scratches and blisters.
2) Denser anodized finish.The All-Clad LTD finish is much denser and more even that that on Calphalon.This makes it more attractive and easier to clean.On the MC2 stuff the finish is not anodized, but it is tightly frosted and well made.It's quite attractive too.I've started to accumulate MC2 stuff because it's cheaper and performs just as well.The LTD stuff does look better on a rack mixed with Calphalon.It's tough to beat black aesthetically.
3) Greater heat sensitivity.You actually cook with the stove set to a lower temperature with All-Clad.It appears to register changes more quickly.Both types of pan are good in this reguard - but the All-Clad is noticeably better.

As a fry pan, the All-Clad MC2 12" fry pan hits on all cylinders.It's big enough for a 4 egg omlette, or most of pound of bacon.It's battleship built, well balanced, even heating with great sensitivity.The handle stays cool and is angled so that you can lift the heavy contents without undue strain on your wrist.The nonstick finish is effective and tough as nails.The MC2 finish is durable and very attractive.Ultimately I'm more partial to the LTD finish because it matches well with other anodized aluminum cookware - and you can clean it very effectively with Ajax.The MC2 finish will yellow a bit over time.Real chefs just let it get brown. It looks like real cookware.In any case, exterior aesthetics don't relate to cooking performance.

Update on the MC2 finish:after using it for months and letting it get nice and brown I tried cleaning it with the 3M scrubby and Ajax/Comet cleanser I use with the LTD finish and it worked like a charm on the MC2.Just make a nice paste and power away the burnt on grease in moments leaving a nice buffy shine.Don't worry about scratches - the MC2 finish is a fine patina of minute scratches anyway!It looks great and is basically indestructible.

All-Clad pans are always well made, and this pan is no exception. A couple things to keep in mind with this particular pan:
1) Master Chef 2 finish - I love the brushed aluminum finish, which should age well, but for now, not everything is available in this finish, though the selection is pretty good.
2) This is an 8" pan, which I find a nice size for a lot of stuff, but it is "small" (of course, there is a 7", if you like tiny pans :^)
3) This is the stainless steel interior, not non-stick. While All-Clad guarantees their non-stick interiors, I love the stainless, no worries about scratching, you can get in there and scrape away when making sauces. But you will want to use a bit of olive oil or other fat whenever cooking; but then again, why wouldn't you.

I've heard some complain that their nonstick surface did not last as long as they would have liked, or that it actually became sticky. Those reading should know that you should only use a nonstick pan for cooking things that require it, like; omlettes, eggs, pancakes, etc. For sautes and normal cooking, you should have another regular (i.e. not a nonstick type) pan. This will ensure that your nonstick pan will last a very long time because you will not be prematurely wearing it down by using it for cooking it was not made for. Sautes cook much better on a regular pan anyway. You should only use plastic or wood utensils on it, never metal. Also, nonstick pans are NOT dishwasher safe! Dishwashers will damage the nonstick surface! Wash your nonstick with a soft sponge and soapy water only.
All Clad is probably the best cookware around. This is due to the layered metal design (and the lifetime warranty). It has stainless steel layers with aluminium in between. This works to evenly distribute the heat (even if you have a nasty electric element stove!) because aluminium is a great heat conductor. Also, this pan has the layers on the sides as well so the heat distribution is quite even.
That said, my feeling is that this pan is too expensive. It's very well made and works well, however for non stick pans, you will see very similar performace in the much cheaper Emerilware nonstick (also made by All Clad). The difference is that the Emerilware nonstick pan does not use any stainless steel. Instead, it uses anodized aluminium. Aluminium is a great heat conductor so this pan will perform just as well, for a much cheaper price. The outside finish may not look as good for as long as a stainless steel finish though so if you care about looks and don't mind spending the money, this All Clad is tops.
The Emerilware one still has the lifetime warranty and is of the exact same dimensions as the All Clad branded one. And I like the handle on the Emerilware even better than the handle on the All Clad.
With this All Clad, you are paying more for the layered stainless steel and aluminium, which require more labor to produce as well as more metel and materials.
Of course the choice is yours. If you want the best and don't mind spending the extra money, this All Clad is tops. If however you want nearly identical performance at a cheaper cost and the same lifetime warranty, the less expensive Emerilware pan would be a better match. I don't think you can go wrong either way!

This is one sturdy pan--be ready for a bit of heavy lifting if you're going from stove to oven, because it takes two hands. I knew I wanted a cast iron skillet for frying and other things, and knew I wanted it to be a heavyweight (because that's how good cast iron skillets should be), and decided on this one because I liked the looks and the pouring lip, and Cuisinart tends to be reliable. It has a sorta high price tag, but from what my grandmother told me, a good cast-iron skillet will last forever, so I dove in. And so far, it's been more than worth it. Not just for chicken frying, though the straight tall sides make it great for frying (I've tried a couple things, chicken, hushpuppies, and zucchini and all have come out nice an hot and crisp), but also for making things from browning a ton of onions, to simmering a sauce, to making a big curry for about 10 people. It's just a workhorse of a pan, and the ability to drop it in the oven (using both hands, don't forget) to finish off a dish is very helpful. Oh, and it does look great (I have red) on the stove, too, which is a bonus. Overall, I'd suggest this pan to anyone, whether they want to use it to fry chicken or not. It's an investment that you'll be using for many years.

I couldn't believe it at the check out when it showed that the company was actually offering free shipping since they recently launched on Amazon. I bought this pot to replace my previous one that was very unreliable, and so far, this pot has been working perfectly. Once the lid was even dropped on the floor, and it didn't break. Not bad, huh?

I think I am going to order a couple more for Thanks Giving, two for myself, one for mom, and one for grandma. They'd love it.

For me the most appealing feature is the welded on handle so there are no rivets or screw heads in the pan to collect cooked on food or to clean.What the picture doesn't show well is that the handle is a split "wire" type rather than solid or tubular, there is a thick heat diffusing disc on the bottom, and the sides of the pan are mirror finish, but the bottom and cooking surface are brushed finish.It seems to heat quickly and much more evenly than the teflon pan that I used before to grill sandwiches and fry eggs.

I got this as a Warehouse deal from Amazon and didn't really notice any defects with it.The nonstick surface is great - it's a bit rougher texture than my old Calphalon pans.Not sure how that helps performance, but it's definitely effective.Love the long handle.This is a heavy duty pan.
