The pan is performing as hoped for.This small 8 inch pan is used for preparing an egg or sweating onions, peppers,etc.The metal handle has not gotten hot.The three rivets holding the handle to the pan transmits a solid feel and the handle's correct length allows good control for flipping.Everything easily washes off with a rag.

Heat Settings
Use a lower heat setting than you normally would. Calphalon cookware heats and cools more quickly than other cookware because it's made of heavy-gauge aluminum. It's important to use the right heat setting for the cooking method you're using. Experiment to find the right heat settings on your stove.

    High heat for boiling or reducing liquids only.
    Medium to medium-high heat for sauteing, stir frying, and frying.
    Low heat for warming food, simmering, and preparing delicate sauces.

Stovetop and Oven Use
When sauteing, stir-frying or frying, always preheat the pan at the temperature setting you'll use to cook. Preheating provides maximum control. The pan is properly preheated when the rim is hot-to-the-touch. Do not preheat on high. For cooking techniques such as sauteing, stir frying, or preparing an omelet, preheat at medium to medium-high. Infused anodized pans can be used in the oven up to 500 degrees F. Handles will become very hot in the oven. Always use a potholder or mitt.
Quick Cleaning and Care
Hot, soapy water and a dish cloth--that's all you need to keep Calphalon One Nonsticksparkling clean. The nonstick cooking surface releases foods as easily during clean-up as it does while you cook. To keep your cookware looking new, occasionally clean it with a Scotch Brite pad and Barkeeper's Friend cleanser.
Do not clean Calphalon One Infused Anodized Nonstick cookware in a dishwasher. Dishwasher detergents will damage the surface. Dishwasher use will void your lifetime warranty. Hand wash your cookware thoroughly inside and out after every use. Wash with hot, sudsy water and a dishcloth or sponge. To restore your pans to "like new" condition, wash with a green Scotch Brite pad and Bar Keeper's Friend. Pay special attention to rinsing when you use Bar Keeper's Friend; without careful rinsing, the cleaner my occasionally leave a powdery soap film.

    Do not use oven cleaners or other caustic cleaning solutions, baking soda, automatic dishwasher detergent, liquid bleach, liquid household cleaners used for walls, floors, porcelain, etc.

    Always allow your pan to cool before washing. Submerging a hot pan in water can cause irreparable warping.

    For stubborn burnt-on spots, allow your pan to cool then soak in hot, soapy water for 10 minutes. Burnt-on foods will lift off after soaking.

    To restore shine to stainless-steel covers, wash with a dish cloth or sponge and Bar Keeper's Friend.

    Because Calphalon One Nonstick is hand-crafted cookware, you may notice subtle variations in the pans' finish. These "character lines" are perfectly normal--a natural result of the manufacturing process.

Excellent Frittata Pan, and the most used pan in my kitchen.
Gentle heat your ingredients/left-overs/or what ever (I do a smoked salmon (which I don't fry, just add at the end before oven cooking), pine nuts, green onion, mushroom with spinach with goat cheese frittata everyone loves) on low heat on the burner, add your eggs and cheese, transfer the whole thing to a preheated 350 degree oven for 20 minutes and YUM!
Easy Clean Up too!

Such mixed reviews on these pans!I had to order these twice because as another reviewer stated..lousey packaging.They arrived damaged.While Ihave not noticed the nonstick coming off, I do have to agree that these are not a good 5 year pan.They are poorly balanced, that meaning the handle is heavier than the pan and it will not sit flat on the burner, everything you cook slides toward the handle. I'll continue to use these until I find a replacement....then out they go!

I originally decided to buy an All-Clad Stainless 13-Inch French Skillet over the All Clad 14" fry pan since both pan bottoms are the same diameter (same amount of cooking surface). But the French skillet's pan top has a smaller diameter than the 14" fry pan due to the steeper slope. When I need to cover the French skillet when cooking, I can use the lid from my All Clad 6 quart sauté pan. There is no All Clad lid I know that I can cover the 14" fry pan, not even if you buy it separately. But, as another person noticed, the 13" French skillet has a noticeable high pan center that I first noticed when frying eggs (the eggs kept sliding away from the center of the pan). You may not care if you like omelets but then the pan's utility is limited. The LTD2 14" fry pan is about one pound heavier than the All Clad 13" French skillet (4.11 lbs versus 3.1 lbs). Both pans heat up equally fast and evenly on my gas range. This 14" LTD2 fry pan has the same handle as the Copper Core line which is longer and wider which in my opinion gives better comfort and control for this largest of All Clad's fry pan.

This is my first All Clad LTD2 piece (I have a 12" fry pan and 1 quart sauce pan in the original LTD). I noticed that the anodized finish of the original LTD series is not very hard and wears away quite easily when compared with the original Calphalon anodized aluminum finish. Only time will tell how well the newer hard anodized finish will last.

PROS:
The 14" fry pan bottom is level so it can allow for frying eggs when compared with the 13" French skillet (which has a noticeable raised pan center).
Has the longer and wider Copper Core style handle which provides better control when compared with the same pan in Stainless or original LTD.

CONS: No lid available for the 14" fry pan if you want to steam or braise.

I am glad I didnt read the reviews before purchasing..I was going for the 'healthier' cookware option. I had teflon that was coming off in my food.
Anyway, I purchased the glossy white 7 pc. set and I tell you I love it. I did have the sticking issue the first time. I soaked it and had no problem washing it, I just had to soak it. The second time I used it I used Crisco Butter spray. I made an omelete and it came out just about pretty dang perfect! The trick was using the spray. With the prior, I used olive oil. It says in the instructions to not use sprays, but I did and it's worked just fine. I have not used Pam or any of the other ones yet. Also, I think a trick is heating the pan slowly-on a gradient. Instead of say just turning it on high and placing the pan right on. I hope this helps!

I've owned several Scanpan products. This fry pan, an 8-inch fry pan and a sauce pan. All stick after being used for a while. After I had problems with the first one I talked to the store I bought it from and to Scanpan. They said to use lower heat and don't use cooking sprays. I followed those instructions with the next pan I bought and still had problems. I also tried the "restore" method mentioned in the manual using the steel wool that was included with the pan without any success.

When they were new they were great, but once they started sticking, they were worse than a regular pan without a non-stick coating. Plus the sellers won't back them up. I tried to return mine under their "Lifetime" warranty, none of the stores selling them would take them back without talking to the distributor first. The distributor never returned my phone calls. Also a major consumer testing magazine that originally gave these a high rating retracted that rating after getting bad feedback from owners. You can read back issues in your library.

While searching for a healthier alternative to metal cookware, and especially (toxic) teflon, I found Xtrema Ceramic Cookware.I didn't purchase it through an Amazon seller, so I can't rate the seller.I bought mine at ceramcor(dot)com with free shipping.But since I saw this cookware here at Amazon, I thought I would give it a review.

So far I purchased the 5.5 quart covered saucepan, the 12 in. covered skillet and the 10 in. skillet.The 10 in. skillet doesn't come with a cover, but the 5.5 qt saucepan cover fits it perfectly.This cookware only took me a couple of meals to get the hang of.My husband and I absolutely love it!When stovetop cooking, we learned fast that it heats up real quick and only needs the medium heat setting or lower... especially if you cook without the cover.When your food is done cooking you want to remove the cookware from the burner because your food will continue to cook as the heat is retained for a long time, which is perfect for setting it on the dinner table if you want to keep your food hot.My first experience was not good.Being used to cooking with high heat (for only a few minutes) before lowering the temp, I over-cooked my meal and it stuck pretty badly to the pan.I soaked it overnight with warm water and dish liquid and it cleaned up just like a teflon pan, no kidding!Needless to say, they clean up like a breeze when you're "not" burning anything, lol!It has a non-scratch, non-toxic ceramic glaze surface.You can use brillo pads on these and they won't scratch, but so far I've only needed a regular kitchen scrub sponge.This cookware can be used in the oven, stovetop, broiler, freezer, grill, microwave and dishwasher... very versatile! What I love best about this cookware is using the cover when cooking on the stovetop.Because the cover is the same material as the pan, your food cooks like a covered casserole in the oven.

This is a long review (sorry!), but just a quick mention... tonight (on the stovetop) we cooked chicken breasts with peppers, onions and garlic with the cover on- at the last few minutes of cooking time I tossed in 3 large, sliced, sweet potatoes (with cover back on) and they cooked super fast, were tender and absorbed all the flavors... no need to cook your potatoes separately!Next time, along with the potatoes, I'll toss in some greens, too, saving me the hassle of cooking with so many pots and pans.

This cookware is expensive, but other than being durable and long-lasting, if you read all the health benefits at the website I mentioned above, you'll agree that it's a healthy investment.I'll never go back to aluminum (which is known to cause alzheimer disease) or toxic teflon... which, btw, if you have pet birds please do not cook with teflon.The fumes are so toxic and are known (and statistics are well documented) to kill birds within a matter of minutes.Their little livers shut down after working overtime trying to detoxify the fumes, this causes fluid to fill their lungs... in turn suffocating them to death :o(Sorry, I didn't mean to end this review on such a sad note, but I think it's very important for everyone to know this.

I like the pan -- except I wish it were deeper.I was trying to replace a Farberware Millenium 10" pan that was 3.3" deep.The product description said this was 3.6" deep.It isn't.I like to use the pan, not just for omelettes, but for anything that needs to be sauteed and then cooked with a lid.I can't do it -- too shallow.

I decided to keep it and not return it, although I am having second thoughts due to the high price.The nonstick surface does work great, and the glass cover is great.

I've used my Scanpan for a bit over 2 years now - the only piece of Scanpan I own.I cook almost everything in Farberware Classic plain old stainless made in Da Bronx, Noo Yawk. But a cook's just gotta have ONE good nonstick pan. I tried all the cheap stuff, then a Circulon (ever try to keep one really clean?) Then a "Pots & Pans from Calphalon" teflon/silverstone piece of junk. Chipped and flaked and RUSTED where the teflon left.
Then SCANPAN came into my life.This thing is bulletproof - use steel utensils on it, burned he;; out of it one time - no problem. One nick on the top edge in two years caused by beating the bejasus out of a big serving spoon trying to dislodge some thing or other that was stuck to the spoon.
Want to give a REAL NONSTICK WEDDING GIFT???? Give the kids a set of this stuff - they'll love you for it. Neighbors daughter got married, wanted Calphalon, gave her Scanpan instead. She and hubby are believers. She got some odd pieces of Calphalon and commented on how hard it is to clean. No teflon "poisoning" hangups with Scanpan either.'Nuff said.

I am in love with this pan. I ordered the 8 inch omelette pan as a test-run with the idea of possibly purchasing an entire set of this cookware. I am looking to replace a set of Calphalon stainless cookware, which I hate because EVERYTHING sticks to it. I want to avoid Teflon, because I have a pet bird, and Teflon is very very bad for birds, and honestly, if cookware can kill my bird, it can't be that great for me either, regardless of the assurances that DuPont tries to give.

I thought I would give this a whirl. I tested it out with eggs, as they are one of my biggest challenges with the stainless - half of the eggs stay in the pan, and even with my one remaining teflon pan eggs can still stick.

They don't stick to this pan. Water doesn't even stick to this pan, it runs right off and leaves a couple of beads behind. So I scrambled up some eggs, gave the pan a spritz of olive oil spray and about a teaspoon of butter. The eggs came out smooth and tasty leaving only a slight residue around the pan at the level the liquified eggs filled it to. I let the pan cool before washing it (to avoid thermal shock.) A tiny bit of dish-soap, a swipe with a dobie pad and no trace of the eggs remained. I gave it a quick scrub and it wound up clean as a whistle.

That is how it has been every time I use this pan. Chantal says that it is dishwasher safe, but I have yet toput it in the dishwasher - I haven't needed to, it is that easy to clean.

The pan is also quite substantial, it isn't as heavy as cast-iron, but it does have some heft to it. If you hit someone over the head with it might not knock them out like cast-iron, but it would certainly throw them for a loop, so you know, I wouldn't recommend it. It also probably would void the warranty, which is for the lifetime of the original owner. Nice.

Now I just need to save up the cash for the 10 piece set, because I am sold on this cookware.

After reading all of the good reviews I decided to get this pan.If I really liked it I was also going to purchase the chef's set of other pans.When it arrived I was so excited.I had been using a cheap omelet pan that all of the teflon had worn off and I was ready to invest in some good pans.Two things I found out.If you put veggies in your omelet and they touch the pan it will stick, but it cleaned up easily.I had to put a teaspoon of butter in.Second the rivets stick out and food collects around them so I have to take a toothpick to them occasionally.One of the rivets started moving, which I don't believe it is supposed to do.I called Scanpan 3 times so far and keep getting an answering machine.I leave a message but no one calls me back.I will try again today.I am deliberating if I should get the classic in the other pans but I hate the glass lids and this problem with Customer service is leaving me leery of making another purchase with this company.Update.On the last call I was able to get a hold of customer service.The return was easy and the pan was replaced quickly.We ended up purchasing the 10 piece professional set and have been thrilled with how easy these pans are to cook with. We have not had any additional problems and I have recommended these pans to several of my friends and family.The only thing I would not recommend is buying the pasta insert.Anytime I use it water boils up all over my stove.I have tried to put less water in until there is not enough water to cook the pasta.I am now using it as a strainer in my sink.

I don't know what the other reviews are about, but this pan isn't advertised with a lid.Most 8-12 inch pans don't come with lids.However, if you buy the VERY inexpensive Calphalon Contemporary Stainless 2 quart chef's pan from Amazon (which is an amazing deal) that lid fits this pan perfectly.I actually have 2 other lids from other Calphalon One pots/chef's pans that fit this little guy.

The weight is nice.Perfect for small portions.Cooks evenly and clean up is very easy.I love this thing and I am using it just as much as my 10 inch pan which gets used very frequently.

While cute, this little pan is difficult to use. There's no room to use a spatula, so you'd better like the eggs cooked through - you can't flip for over easy, and the egg white is too deep to do sunny-side up. Also the handle gets hot and the little plastic egg bit is not enough to grip, so you have to use a potholder. Plus, it's so small that it won't fit any normal-sized burner - another burn risk to your fingers.

I bought it and used it believing that it would cook easily.It doesn't. You cannot put enough grease/oil or whatever to prevent sticking.I cooked at low temperatures and still had problems.Pass on this one.
