Sitram Profiserie 9.5-Inch Commercial Stainless Steel Fry Pan Review

Sitram Profiserie 9.5 inch Commercial Stainless Steel Fry Pan

I've been using Sitram for several years, and I've never had any problems. The stuff is built for the food industry - no frills and no fancy packaging, but it will stand up to use and abuse.

The company changed hands a couple of years ago, and for a little while during the transition their customer service was suffering. Don't let that detract you from buying this cookware.

(My only beef is that they've discontinued the Magnum Pro line, which was the only copper-based line that also worked on induction. Dear Sitram/Freiling folks - please, oh please bring it back).

Emerilware Stainless Steel Pasta Inserts Review

Emerilware Stainless Steel Pasta Inserts

This item works as well as I expected it to.

Two notes for those thinking about buying this:

This insert is for the TALL 8 quart Emerilware stock pot, not for the short one that comes in the 14 piece set.(I had to go out and buy the tall pot so I could use this)

This insert will add about 3 inches to the top of your tall stock pot, so make sure you have clearance - I can only _just_ fit it on my stove, with lid on, because I've got an over-stove microwave oven and vent combo.

When cooking pasta, shellfish, or corn, you need to quickly remove the contents of the pot to prevent overcooking; this insert allow Emerilware 8 quart insert lets you to do just that. And when cooking stocks, you can remove vegetables and meaty bones by simply lifting the insert by its sturdy handles, avoiding the risks of pouring from a heavy pot into a strainer in the sink. Unlike many inserts, you don't sacrifice any space with this 8-quart stainless-steel piece.

Revere 1400 Line 12-Quart Restaurant Style Stockpot with Cover Review

Revere 1400 Line 12-Quart Restaurant Style Stockpot with Cover

I purchased this pot at a local retailer when I discovered I needed a stainless steel pot for making cheese at home. All of my cookware, which I have been just this side of replacing for a year, is nonstick. I'm not a fan of nonstick for anything except the cleanup process -- and when it begins to deteriorate, it's flat out unheatlhy. So I was excited about the prospect of buying a nice stainless pot that I could also use in the oven.

The good about this pot:

- Although the copper coating on the bottom is thin, after several batches of cheese I have not seen any scorching when working on an electric coil stove.

- For its size, it is very lightweight.

- I have had no trouble cleaning it, even removing the residue from working with coagulated dairy products. (However, it must be cleaned properly!)

- The lid seals tightly and the handles are well-made and easy to work with.

- It can go from stovetop to oven, making it a viable option for recipes like goulash or roasts without having to go to a cast iron pot.

- Its configuration (tall and narrow) means that it does not hang over the sides of a large coil burner and retains heat well.

The negatives:

- As other reviewers have stated, this is not the RevereWare of old. It is thinner, not as finely milled inside, and can't be used on glasstop surfaces.

- You actually have to clean it. Many people have gotten spoiled with nonstick cookware and no longer know what it's like to have to soak and soap a pot right after using it in order to keep from ruining it. I don't personally consider this a negative, but it's definitely a consideration if you're a "cook today, clean tomorrow" kind of person.

You will pay far, far more than the price of this pot for a heavy stainless or coated cast iron item of the same capacity. With a clear understanding of its limitations, I think it's an excellent addition to my kitchen.

Revere 1400 Line 8-quart Restaurant Style Stockpot Review

While this pot is beautiful looking as all Revereware is, it is not the same quality as my 30 year old Reverewear. The stainless steel is not nearly as heavy and the lid doesn't fit properly. Food has to be cooked at a lower temperature otherwise it sticks. Otherwise, I guess for the money is it ok.J.M.
