The key ingredients for a viable restaurant-grade non-stick saute pan are as follows:

* Sturdy pan that can be banged around without warping/denting too easily.
* Even heat distribution.
* Silicone sleeve for handle, for easy transfer between stovetop and oven.
* Reasonably durable non-stick coating.
* Inexpensive to replace when worn out (which usually mandates aluminum rather than stainless)

By these 4 criteria, the few winware pans I've handled are servicable.

My chief nits with this line are as follows:

1) They're made in China, rather than the USA.Granted that this is a bit of a sweeping generalization, but from my experience American made products are often a bit higher in quality than their Chinese counterparts.For the same price range, I'd rather buy Eagleware (American), over Winco/Winware (Chinese).

2) In order to keep costs down, this line is all aluminum ... which renders the pans useless for induction cooking.Then again, that's true of a lot of pans in this price range, and most restaurants don't use induction, so it's a non-factor ... except for well to do home cooks.Ya get what ya pay for in non-stick pans.

3) On a specific pan-size note, I have a nit with the 8" pan.The chief purpose of an 8" NS all aluminum pan is making individual omlets, and (without going into too much detail about why) that's about it.Unfortunately, this particular pan is less than ideal for omlets, because the sides have too shallow a slope ... the 8" pan has the same slope as the 14" pan, so losing a full 2" of diameter only leaves the interior diameter of the bottom a somewhat meager 6", which is a bit tight for a classic omlet.

Bottom line - this is a serviceable, if unspectacular, inexpensive line of NS Aluminum saute pans.And yes, they are commercial grade ... which isn't really saying much if you're familar with such.In true restaurant fashion, they're meant to be beaten on, and replaced regularly when worn out.
