(More customer reviews)I originally purchased a Lodge 8-Inch skillet for use when camping, but I quickly discovered why so many cooks prefer cast iron cookware (almost all cast iron cook pieces are rated at 5 stars).It is very durable, conducts heat better, and with proper care it will develop a natural non-stick coating that will last for generations.Perhaps more subjectively, I think that meats tend to taste better when cooked in it.
Now, I have abandoned my collection of cheap aluminum non-stick cookery and most of my meals are prepared in this skillet.From chicken fajitas to stir fry, the skillet is what I use most, followed closely by the microwave.
Cleaning is simple: I scrub with hot water, place it back on the eye to boil off the water, then wipe it down with oil.I find that I am conscious enough to do it right after cooking, whereas a pot would end up sitting in the sink waiting to be cleaned.As a result, it seems as if cooking with cast iron is faster and easier.
Now, I almost exclusively use the skillet for cooking.It took a couple of attempts before I got it seasoned correctly, but the skillet is now darkening nicely.
The 8-inch skillet is perfect for me, not too large, nor too small.It is big enough to fry up several pieces of chicken, or large enough to make French toast.
Note: Lodge makes two different lines of cast iron cookware.If you don't want to have to season it yourself, I would recommend you buy the Logic brand of Lodge cookware.They are pre-seasoned and ready to use and well worth a few extra bucks.

Spead a thin coat of solid shortening or vegetable oil over the entire pan including handles and exterior surfaces. Line the lower oven rack with aluminum foil to catch any drippings and preheat oven to 350 degrees. Place cookware upside down on middle rack of oven and bake for 1 hour. Turn off the oven, leaving the cookware in the oven until cool. Your cookware will look slightly brown, instead of the familiar black but it is ready for cooking. It will blacken with cooking.
