Iron Chef 12 Inch Stir Fry Pan Review

I have been using this pan for almost 2 years, and I really love it. I didn't like it at first - my first few attempts at cooking in it stuck badly, and then it rusted once when I didn't oil it right after washing it. These issues go away when the pan gets seasoned from use. Now that my pan is seasoned, it is great, and I'm so glad I continued using it rather than throwing it away! The reason this doesn't get 5 stars is that the handle could be better. Mine hasn't broken, but there is a little play between the plastic and the metal which makes it feel less than sturdy.

Product Description:
Iron Chef cookware is produced using a new proprietary casting technology that enables the production of lightweight, thin walled cast iron cookware. The casting is not as brittle as conventional cast iron and can be cast into thicknesses that are less than half as thick. Each piece weighs about half as much as its traditional counterpart. The key benefits of cast iron cookware are heat distribution, good temperature control and good heat retention without the uncomfortable excess weight. 12 Inch stir fry pan is perfect for Asian cooking.

When I purchased a new ceramic top stove, I had to part with some of my favorite frying pans (cast iron which I do use, but carefully and occasionally). I like these pans so well I ordered another set, and bought this 4 qt pot as well. These are well made and a delight to cook with.
