Iron Chef 12 Inch Stir Fry Pan Review

Iron Chef 12 Inch Stir Fry Pan

I have been using this pan for almost 2 years, and I really love it. I didn't like it at first - my first few attempts at cooking in it stuck badly, and then it rusted once when I didn't oil it right after washing it. These issues go away when the pan gets seasoned from use. Now that my pan is seasoned, it is great, and I'm so glad I continued using it rather than throwing it away! The reason this doesn't get 5 stars is that the handle could be better. Mine hasn't broken, but there is a little play between the plastic and the metal which makes it feel less than sturdy.

Product Description:
Iron Chef cookware is produced using a new proprietary casting technology that enables the production of lightweight, thin walled cast iron cookware. The casting is not as brittle as conventional cast iron and can be cast into thicknesses that are less than half as thick. Each piece weighs about half as much as its traditional counterpart. The key benefits of cast iron cookware are heat distribution, good temperature control and good heat retention without the uncomfortable excess weight. 12 Inch stir fry pan is perfect for Asian cooking.

Nordic Ware 14 Inch Asian Spun Wok Review

Nordic Ware 14 Inch Asian Spun Wok
Average Reviews:

(More customer reviews)
Before this, I was extensively comparing to two others: The T fal Jumbo Wok along with the Circulon Elite Hard-Anodized Aluminum 14-Inch and I finally nailed it down to the Nordic Ware. One of the main reasons were because I wanted to replace a $[...] wok by 'Invitations' that I purchased not too long ago from Bed Bath & Beyond - actually it was like $[...] after rebates and promotions, so no love lost here.

The comparisons...

T fal Jumbo Wok: I was ready to buy this wok from a major retailer. As I was going through the bunch, I could not find one that was like new, either there is a scuff here, a scratch there or a knick in between, and as I went through and finally came to one that was knick and scratch-free; the helper handle was deformed. So I said "screw it". Although this wok looked rather good, but it just didn't have the right feel to it, also, it was a bit on the light side and felt kind of flimsy - not worth the price.

Circulon Elite: The same retailer did not carry the actual item but I was able to get an idea from one of their medium sized stir fry pans. The product feels heavy (which I like) but I wasn't too fond of the high-low food release design. I'm sure it was a feat of engineer but that didn't do it for me, non-stick is non-stick, it doesn't have to be any more complicated than it is. I'm more into the long-term and durability of its material that was put into it rather than the fancy grooves. I'm sure it works wonders, but for the addition to its marketing strategy; I wasn't sold.

The conclusion: I wanted a wok which was not only identical to the one I replaced but can perform and handle my day to day tasks. I stir-fry, steam, braise, fry, saute - whatever, you name it! The Nordic Ware 14" wok has exceeded all the expectations, if not, more! It was tested in and by commercial kitchens and NSF certified so I can count on its rigorous strength. Upon the first day of using it (unlike the one I replaced and used with wooden utensils; the non stick coating stripped right off of its initial use), I stir-fried some vegetables with high heat from my electric counter top and was able to achieve some nice searings, food releases with a breeze and it has definitely passed the test of time! Before I toss the other wok out, I kept the removable handle and it fit my new wok like a glove. Now I know why the other cheap wok wanted to imitate the Nordic Ware 14" Asian Spun Wok, clearly, there is no comparison!

Pros:
*Great weight and balance
*Premium non-stick coating
*Perfect size and depth for tossing
*NSF certified and very high quality
*Made in USA
*20 Year warranty!!!

Cons:
*Grip handle is a bit thin, but can get used to (I replaced it with the old wok's rubber grip which is more thicker and fits perfectly)
*Removable rubber handle is some work when coincide with oven, the good thing is I don't really use it in the oven except for storing afterwards.

Iron Chef 14-Inch Wok Review

Iron Chef 14 inch Wok

I bought this wok despite the reviews. There was a blemish in the interior wok, that appeared like a crack but didn't go all the way through. I imagine that there was not enough metal in the mold when it was cast and then most of that flaw was ground out as a normal step in finishing the wok. I can see how such a blemish, if more severe could result in a crack. I am hoping that the blemish will not get worse with use. I have heard that some of these new light weight cast iron woks can crack if cold water is added to a hot wok in cleaning. It certainly seems stronger than the tradition thin round bottomed cast iron wok I own.

Presto Stainless Steel Electric Wok Review

Presto Stainless Steel Electric Wok
Average Reviews:

(More customer reviews)
I've been cooking on a wok since I was a teenager; my dad, ever ahead of the curve, had brought a genuine restaurant wok back from a trip to San Francisco. He loved Chinese food and we'd usually take an hour drive to Philadelphia's Chinatown where there were dozens of great restaurants. He wanted to make fried rice and other stir-fries at home, but woks were not the standard kitchen equipment they are now. Our wok was about 30 inches across...a full restaurant sized wok and the only kind he could get. It hung in the garage between meals because it was too big for the kitchen.

Of course, now everyone or nearly everyone uses a wok, and you can easily find genuine carbon steel woks traditionally used in China. But you can also find cast iron (rather like Indian karhis, their version of over-the-fire cooking vessels), enamel-on-cast-iron, stainless, and non-stick, and ...electric. Each of these woks has pros and cons, because woks need high heat, and are designed to sit OVER the fire not on it. So if you have an electric stove or even a standard gas stove, you are going to make compromises when using a traditional wok. Either you have to use a flat bottom to sit on the stove, or you have to make sure your stove's gas is caloric enough to produce the very high heat needed to sear the food and cook it quickly if it is perched on a wok ring.

Normally, I use a carbon steel wok but my current stove has square burners so a wok ring is out, and I don't think the gas is hot enough. I don't like flat bottomed woks. I think they defeat the purpose of the rounded shape. Nor do I want non-stick surface. To me, cast iron is good, but possibly heavy to handle. So I decided I wanted an electric wok, because the element will get the wok super-hot and the stainless steel is a good conductor of heat and the surface is smooth and relatively non-stick by nature.

What you get:

The Presto wok comes with the wok, a plug-in element with a temperature dial, a glass lid, and a wood paddle for stirring the food. This set does not come with a tempura draining rack, that little wire half-circle that fits over the rim and lets the tempura stay hot while it drains of fat. I happened to have one in the kitchen junk box and lo, it fit perfectly, so you probably can dig one up somewhere.

It also has a small instruction manual.

How to use it:

First, wash the wok carefully in VERY hot soapy water. There is a plastic coating that is invisible but is definitely there. It must be scrubbed off with a nylon sponge. You do not need to season the wok but you do need to season the wood paddle with mineral oil, lest it crack.

You plug the element into the socket on the wok, plug it into the wall and turn the dial up to your desired temp (up to 400 degrees F.) Add oil and when the oil reaches your temp (just slightly smoking) you are ready to stir-fry.

The Test Drive and a recipe:

I happened to make an Italian chicken dish as the first test (excusing this non-Chinese test drive by asserting belligerently and untruthfully that Marco Polo brought this very dish back from his travels.) I heated olive oil, added chicken tenders that were washed and patted dry. After they were seared and half-way cooked, I turned down the heat, added artichoke hearts, crushed garlic, shallots, and let the chicken cook to almost done, tossing frequently. Then I added a cup of broth, juice of half a lemon, pepper, and grated Romano cheese. I thickened it a bit with cornstarch slurry and it was done. You can add capers, and I do like them, but since others in our family don't, I left them out. This dish is served on pasta or rice with a garnish of a handful of freshly chopped parsley and more cheese passed around.

Conclusion:

Yeah, yeah, I'll fry up some rice and shrimp and broccoli later to give it a true test but this chicken was well-received by all. And so is the wok. I loved being able to cook on my kitchen island rather than the stove, and maybe we will do some at-table cooking like Sukiyaki later. This is a versatile kitchen appliance and I'm happy with the choice.

I am very happy with this pan. It's practically non-stick if treated properly. It cooks evenly, heats quickly and is large enough for stir fry. I highly recommend this especially for the price. It's also very light for a cast iron pan. The handle is also great as it's the only cast iron I have that where the handle doesn't get too hot to handle.

Joyce Chen 10 inch Lightweight Cast Iron Flat Bottom Chinese Skillet Review

Joyce Chen 10 inch Lightweight Cast Iron Flat Bottom Chinese Skillet
Average Reviews:

(More customer reviews)
After watching non-stick frying pans deteriorate within a year or two of use, I decided to get an old fashioned pan made of iron. When this product arrived, the surface (cooking side) was covered by rough spiral grooves from machining and I was skeptical of its quality. However, after a month of regular use, with occasional Tempura making with 1/2 inch of oil, the surface is sufficiently seasoned and I have no serious issue with food sticking to the surface (as far as stir-frying meat, vegetable, and rice or making an omelet goes). The product seems quite sturdy, too.

The only minor complaint I have with the product is a small oil leak from the rivet holes, where the handle is attached to the pan, though this might stop with further use.
