Given the amount that we use it now, we wonder how we ever got along without it before!

(More customer reviews)I was surprised at the weight of this pan; I have been a devotee of "Calaphon" for over 20 years.I am starting to convert to stainless little by little.I have some Cuisinart that is also very good, but I like this better.
The handles are angled up which keeps them out of the way and lets them clear other pans on the stove if you have a major cooking project going.The handle also has a gap where it is welded to the pan which lets fluids drain down rather than collect in a pocket.It can make your stove a little messier, but it is easier to keep the pan clean.
The interior is silky smooth and requires just a small amount of oil to keep food from sticking.The recommend that you use non-metalic utensils to keep from scratching it.The heavy layer of copper bonded between two layers of stainless on the bottom works great to distribute heat accross the pan.The side are a single layer of heavy stainless, so they do not get hot and cause food to burn on.
This pan is very well made and should last for a lifetime.

Very good decission. First I did a steak to perfection. The grease drained off, cleanup was easy, fast plate change and on to waffles.

(More customer reviews)I bought this skillet with high hopes, however, I was very dissapointed after using it, and I ended up returning it.The biggest problem is that the heating is extrememly uneven.Someting you are cooking near where the heating elements (under the skillet)may cook in 4 minutes while things not near the elements will take 12 minutes.The skillet also, did not have enough power to keep all the oil in it at a high enough temperature to properly fry things.

(More customer reviews)I just received the smaller, 20cm version of this skillet as a gift and am delighted with it.Before, I was always burning butter, omelets, pancackes because the skillet would continue to warm up after I started cooking on my electric stove (yes, I always turn down the temp a little after I start cooking).It was just too hard to tell how hot the skillet was until the food started burning.No problem with this guy - you can watch the skillet temperature rise and fall as you warm it up, add ingredients, or simmer.I'm ordering the 28cm version tonight.
The electronics use a standard AAA battery in the handle.The battery is easy to replace.I was a little worried about how heat might damage the battery, but found that as long as you put the skillet on a burner that's sized for the skillet (or smaller), the handle stays reasonably cool.Heat spreads very evenly across the bottom.

Pros: Very simple to use.Easy to remove the temperature module for washing, dishwasher safe, the display has large, easy to read numbers, the temperature sensor responds very quickly to changes in skillet temperature, the display tells you the ideal temperature for 11 common foods, an alarm will beep if the temperature gets too hot for what you're cooking, and the walls of the skillet are nice and high, and the skillet (remember, I have the 20cm version), while sturdy, is not too heavy.Clear instructions, although you hardly need them for basic operation. Lastly, because food isn't over-cooked, the skillet is easier to clean.

Cons: It would be nice to disable the over-temperature beeper if you know you will be watching the food cook.There was a clear piece of protective shipping plastic I didn't notice on the underside of the handle when I cooked the first time.It shriveled, but didn't burn or stick to the skillet or cause any damage, so just make sure you remove it when you unpack your skillet.

Lodge Max Temp Handle Mitt, Black Review

(More customer reviews)This mitt is good at insulating handles from heat... one can hold the skillet comfortably without feeling the heat. I don't think this thing can resist as high temperatures as stated on the product description because mine has already scorched at the edge where it comes in contact with the pan and as a result the fabric is fraying badly. I have never left the mitt in place while cooking, I have only used it to move the pan from the stove to the sink or to lift the pan to serve meals from it so I guess that the black fabric covering the outside of the mitt is not very heat-resistant.
