Heuck deserves lauding praises not only for the very affordable price at which amazon lists this skillet, but also for the impeccable attention to detail in their manufacture of their proven cookware. Heuck stands up to the same quality, or is, as in this case, better than Le Creuset, Calphalon, etc. Enamel Cast Iron products have been around since the Industrial Revolution because of their wide versatility ("from the fire, to the fridge, to the freezer, and back to the fire"), extremely durability, and for being such a pleasure to use. Its porcelain enamel surface is inert - does not react chemically with any food, nor at any temperature. This skillet proves its worthiness with sautéing, frying, making stews and soups, brazing or slow roasting large cuts of meat, and even for baking such goodies as cornbread and coffee cake. Product ships with instructions on how best to clean and care for skillet and its different surfaces. However, it is further recommended that, if there are cooked-on food stains and particles, let soak for at least an hour in warm water, and hand clean this product with only the mildest dishwashing liquid and dishcloth or mildly abrasive sponge, but NOT in the dishwasher. The heat/water cycles of the appliance tend to eventually wear the shine of the enamel, making it opaque and diminishing the enamel's heat retention. As with any heavy cookware, such as Pyrex (another excellent product), one must also take care not to chip or break the porcelain enamel coating on the cast iron. This color choice is a deep Persian blue (not cobalt on the exterior), and is very beautiful with ivory white in the interior. You will receive many years of great use and pleasure of this product. Basically I love this pan. I long ago ditched the poisonous non-stick coatings, and am now replacing my Stainless steel and bare cast iron to avoid leeching metals.I love a heavy pan, it cooks much better than the tri-ply SS it is replacing and at a lower setting, and cleans up beautifully with a brief soak. I love the light interior -it is bright white, so I can see the food. The Chianti color is lovely, and fortunately not brown toned. I am careful to avoid temperature shock.
I'm glad the other reviewer suggested the Mario Batali silicone HANDLE GRIP that matches this, too.
The one caveat is that the interior is kind of uneven, rippled, almost lumpy, as if it was being cut by hand and they didn't quite finish before they applied the enamel.
The leaflet says "Your Mario Batali Cast Iron Cookware has been uniquely hand-cast from molten iron in individual sand molds and layered with three coats of high quality enamel. Each piece is then baked at extremely high temperatures to seal the enamel coating and create the high gloss finish."
I called COPCO, who makes these, and they reiterated that these are hand made and unique, but that if I thought there wasa problem I could return it for a replacement.
I'm really not sure whether this is a defective one or just the way the Mario Batali pans are. I didn't see anything about this in any other reviews. If anyone else has one and can comment I'd really appreciate it, especially before my 30 days are up!
It unfortunately gives the interior more of an amateurish look than a handcrafted one.A helper handle would also have been nice.
