Emeril Enameled Cast Iron Deep Dish Lasagna Baker Review

Emeril Enameled Cast Iron Deep Dish Lasagna Baker

Absolutely a first class baking dish. Cooks perfectly and cleans easily plus is guaranteed lead and cadmium free. This is a really beautiful piece. Originally I bought a Lodge 4.25 quart roaster and was disappointed with the sandpaper like interior that is difficult to clean. Additionally, the Lodge, coming from China, very well might have lead or cadmium in the enamel mix. So,I bought this and can't be more pleased. The price was less than the Lodge too.

Mario Batali 10-Inch Saute Pan, Chianti Review

Mario Batali 10 inch Saute Pan, Chianti
Average Reviews:

Basically I love this pan. I long ago ditched the poisonous non-stick coatings, and am now replacing my Stainless steel and bare cast iron to avoid leeching metals.I love a heavy pan, it cooks much better than the tri-ply SS it is replacing and at a lower setting, and cleans up beautifully with a brief soak. I love the light interior -it is bright white, so I can see the food. The Chianti color is lovely, and fortunately not brown toned. I am careful to avoid temperature shock.
I'm glad the other reviewer suggested the Mario Batali silicone HANDLE GRIP that matches this, too.
The one caveat is that the interior is kind of uneven, rippled, almost lumpy, as if it was being cut by hand and they didn't quite finish before they applied the enamel.
The leaflet says "Your Mario Batali Cast Iron Cookware has been uniquely hand-cast from molten iron in individual sand molds and layered with three coats of high quality enamel. Each piece is then baked at extremely high temperatures to seal the enamel coating and create the high gloss finish."
I called COPCO, who makes these, and they reiterated that these are hand made and unique, but that if I thought there wasa problem I could return it for a replacement.
I'm really not sure whether this is a defective one or just the way the Mario Batali pans are. I didn't see anything about this in any other reviews. If anyone else has one and can comment I'd really appreciate it, especially before my 30 days are up!
It unfortunately gives the interior more of an amateurish look than a handcrafted one.A helper handle would also have been nice.

Mario Batali 0-49050 12-Inch Deep Skillet, Persimmon Review

Mario Batali 0-49050 12 inch Deep Skillet, Persimmon

I was looking for a cast iron pan that was 12 in. and deep. And this one is deep! It measures a full 3.5" deep. The enamel looks nice as well. I am familiar with the Mario Batali line of cast iron cookware, as I already have his 6 qt. cast iron enamel pot in brown. And this pan did not disappoint me either. I was unfamiliar with the matte enamel texture on the inside of this pan. As I was expecting it to be just plain cast iron. But I prefer the matte texture. It is NOT raw cast iron. So it does not need seasoning, and it will not rust. And it should get more non sticky as you use it. But beware, you cannot cook eggs on this right away, and expect them not to stick.
What this pan really shines at is searing and braising. And it does this wonderfully. It is deep enough to fry without splattering your cooktop as well. It does not come with a lid, but I just use a 12 inch lid from my other fry pans.
And it is also dishwasher safe, although I prefer to hand wash mine.
The one con with this pan is that is sooo heavy compared to other cast iron skillets. But I prefer heavy as I use mine everyday and want it to stand up to my use and abuse in the kitchen.
I think this skillet is a very good option for those who are looking for a heavy cast iron skillet that will last for many years, but just cant bring themselves to spend the $$$ for the french kind.
Edit- As a side note, Mario Batali cast iron cookware is made by Copco. Copco has been making cast iron enameled cookware for around 45 years. And many of their pots and pans are still in circulation and use from that long ago. Check ebay if you dont believe me. So be assured that this is quality cookware.
Edit- I have now used this skillet occassionally for about 1.5 months. I had to change my review down a few stars for quality issue.
In just a few uses, the bottom of the enamel on the pan has scorched from using my gas stove. I dont use anything higher than medium heat on all my cast iron pieces, and this is not acceptable to me. And to make matters worse, the enamel has started to chip on the outer rim of this pan. I have only hand washed this pan, and not banged it alot. The quality just is not there with this pan. I am disappointed, because it is a very good size and nice and deep. I will have to buy a Lodge 12" skillet. Something i should have done at the beginning. You are now warned to buy at your own risk.

Mario Batali 12-Inch Deep Skillet, Chianti Review

I needed a skillet that was heavy and multifunctional and reasonably priced. This skillet fits that bill. The skillet is very heavy and good looking. The interior of the skillet is quite rough, not smooth as I had anticipated. Also, they direct you to use only medium heat and below. I have used twice using the method of browning on the stove top and popping the whole unit into the oven to finish the cooking process. The results were very satisfactory.Even though they say it does not need to be seasoned, I think you have to use it a few times before it is seasoned properly. I will revisit this review in the future.
